- 1.5 pound Smithfield® Applewood Smoked Bacon Pork Loin Filet or other variety
- ¾ cup sweet onion diced
- 2 cloves garlic minced
- 1 ½ tablespoon chili powder
- 1 teaspoon dry oregano
- 2 teaspoon coriander
- 1 teaspoon smoked paprika
- 20 ounce diced tomato w/ chilies 2 cans, mild or hot depending on your preference
- 2 cup beef broth
- 15 ounce can black beans rinsed and drained
Spray slow cooker with non stick spray.
Add all ingredients to slow cooker , cover and set on high for 4 hours or low for 8 hours.
After cook time is up, remove pork loin from cooker and shred. Return back to slow cooker. Serve with desired toppings.
