Ingredients

  • 1.5 pound Smithfield® Applewood Smoked Bacon Pork Loin Filet or other variety
  • ¾ cup sweet onion diced
  • 2 cloves garlic minced
  • 1 ½ tablespoon chili powder
  • 1 teaspoon dry oregano
  • 2 teaspoon coriander
  • 1 teaspoon smoked paprika
  • 20 ounce diced tomato w/ chilies 2 cans, mild or hot depending on your preference
  • 2 cup beef broth
  • 15 ounce can black beans rinsed and drained

Instructions

  • Spray slow cooker with non stick spray.
  • Add all ingredients to slow cooker , cover and set on high for 4 hours or low for 8 hours.
  • After cook time is up, remove pork loin from cooker and shred. Return back to slow cooker. Serve with desired toppings.
