Spicy Eggplant Soba Noodles

Ingredients

  • 2 T oil vegetable or canola
  • 1 eggplant cubed
  • 2 C napa cabbage roughly chopped
  • 2 cloves garlic minced
  • 2 packages Fortune Soba Buckwheat Noodles Shoyu Flavor
  • ¼ C vegetable broth
  • 1 T red pepper paste *** See Notes*** or garlic chili paste
  • 1 T ginger paste
  • 2 teaspoon cornstarch
  • 2-3 green onions chopped

Instructions

  • Prepare noodle packages per package instructions.  Set aside.
  • Heat oil in a large skillet over medium/high heat.  Add cabbage and eggplant.  Cook, stirring often, until eggplant is soft and cabbage is wilted.  
  • Stir in garlic and allow to cook, stirring (to avoid burning the garlic) for 30 seconds.
  • Add noodles with liquid into the skillet with eggplant and cabbage.  Toss well and bring to a boil. 
  • Whisk together broth, red pepper paste, ginger paste and cornstarch.   Stir mixture into skillet.  Using tongs, toss the noodles well and continue to cook, tossing until liquid is thickened and coating noodles well.
  • Remove from heat.  Top with chopped green onions and serve.

Notes

This recipe is made with what I would consider a mild to medium heat level.  If you prefer a spicier note, increase the amount of red pepper paste.  If you prefer a more mellow spice level, reduce red pepper paste by half.
