Tomato Goat Cheese Dip

This warm Tomato Goat Cheese Dip will be the star of the party regardless the theme.  Cherry tomatoes are softened and seasoned and baked together with goat cheese.  Serve with bread or crackers!

Ingredients

  • 2 Tablespoon olive oil
  • 12 ounces cherry tomatoes about 30 or so tomatoes
  • 1 teaspoon dry Italian seasoning
  • 2 cloves garlic minced
  • ¼ teaspoon salt kosher
  • teaspoon coarse black pepper freshly cracked
  • 8 ounce goat cheese log
  • ¼ Cup parmesan cheese freshly grated
  • 1-2 basil leaves chiffonade
  • non-stick spray

Optional

  • balsamic glaze

Instructions

  • Preheat oven to 375F.
  • Place oil and tomatoes in a skillet over medium heat.  Keep over heat, shaking the pan every couple of minutes until tomatoes are beginning to soften.  Just as tomatoes start to soften, stir in garlic, Italian seasoning, salt and pepper.  Cook 1 minute more.  Remove from heat.
  • Lightly spray a small baking dish with non-stick spray.   Roughly cut goat cheese into slices and place in prepared baking pan.  It's okay if it crumbles.  Spoon tomato mixture over the goat cheese.  Bake in preheated oven 15 minutes.
  • Once out of the oven sprinkle with parmesan cheese & basil.  Serve while warm with crackers and/or bread slices.

Optional

  • Drizzle balsamic glaze over top prior to serving.
