Turkey Sloppy Joes with Homemade Onion Rings

- 1 T olive oil
- ½ C diced onion
- 1 carrot diced or shredded
- 1 lb lean ground turkey
- 1 packet sloppy Joe seasoning mix
- 2 T Worcestershire sauce
- 8 oz tomato sauce
- 6 sandwich / hamburger rolls
Homemade Onion Rings
- 1 large vidalia onion
- ½ C milk
- 1 C all purpose flour
- 1 T salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 2 C canola oil
Heat oil in large skillet over medium heat. Add turkey, onions and carrots. Cook, breaking up the turkey and stirring the veggies until turkey is cooked thru and no longer pink.
Stir in seasoning packet, Worcestershire sauce and tomato sauce. Reduce heat and simmer about 5 minutes.
Serve on buns.
Homemade Onion Rings
Slice onion very thin (I find using a mandolin works best set just between ⅛ " & ¼ ")
Soak onion slices in milk for about 30 minutes.
Remove from milk and set on paper towels. Pat dry.
In a bowl, combine flour, salt, pepper and paprika. Toss onions in flour mixture (in batches) to coat.
Heat oil in a high sided skillet to about 375 (I don't have a thermometer so I set to medium/high heat).
Place coated onions in hot oil, in batches, being sure not to overcrowd. Cook just 1-2 minutes. Remove onion rings from oil with slotted spoon or tongs and place on paper towel to remove excess oil.
