Broccoli Quesadilla

This broccoli quesadilla is a cheese lovers dream. Ready in about 10 minutes, this recipe makes a wonderful lunch, after school snack or dinner.

Ingredients

  • 1 tortilla (burrito size) flour
  • 1 teaspoon butter or oil
  • 1 ½ Cup chopped broccoli florets, steamed or roasted
  • 1 ½ Cup shredded cheddar cheese or cheddar blend **
  • ¼ teaspoon kosher salt
  • teaspoon black pepper
  • ¼ teaspoon garlic powder

Instructions

  • Melt butter in a large skillet or griddle over medium to medium-high heat.
  • Once butter is melted, place the tortilla on skillet. Layer filling on one half of tortilla in this order: half of the cheese, broccoli, seasonings and remaining cheese. Fold the empty half of the tortilla up and over the filling.
  • Cook until brown and crispy on bottom. Flip and cook until other side is also brown and crispy.
  • Remove from heat. Cut in half and serve.

Notes

** I like to use a blend of cheddar & monterey jack or colby-jack cheeses
