Easy Asian Noodle Salad

Ingredients

  • 1 package Yakisoba Stir Fry Noodles Hot & Spicy
  • 1 C broccoli slaw
  • ½ English cucumber
  • 1 scallion chopped
  • 1 T lime juice freshly squeezed
  • 1 egg hard boiled, peeled and halved
  • 1 T peanuts roughly chopped

Instructions

  • Prepare the noodles according to package instructions. Set aside.
  • Shave the cucumber into thin slices with either a mandolin slicer or a Y peeler. Cut each of those into 3 long strips.
  • In a bowl, stir together prepared noodles, slaw, most of the cucumber (keep a few strips for garnish on top), lime juice and scallion.
  • Keep refrigerated until ready to serve.
  • When ready to serve, portion into 2 bowls. Top each bowl with a few strips of cucumber, some chopped peanuts and half of the boiled egg.
