Prepare the noodles according to package instructions. Set aside.
Shave the cucumber into thin slices with either a mandolin slicer or a Y peeler. Cut each of those into 3 long strips.
In a bowl, stir together prepared noodles, slaw, most of the cucumber (keep a few strips for garnish on top), lime juice and scallion.
Keep refrigerated until ready to serve.
When ready to serve, portion into 2 bowls. Top each bowl with a few strips of cucumber, some chopped peanuts and half of the boiled egg.
