    Easy Asian Noodle Salad

    Easy Asian Noodle Salad  -  This noodle salad uses just a few easy ingredients and comes together in minutes.

    This recipe was created as an entry into a contest being held by JSL Foods.  I received free product for the purpose of creating a recipe.  As always, all opinions and words are my own.

     

    Everyone who knows me, knows I love Asian flavors.  So, when I was approached to compete in the Fortune Asian Noodle Blogger Recipe Challenge, how the heck could I say no?

    When I signed up for the contest, I had my choice of making either a stir-fry recipe or a cold noodle salad type recipe.  I chose the cold noodle salad because I love a dish that travels well.  This dish I created could be taken to work for lunch or brought to a friends house without the worry of it spoiling in the car.  It can be room temperature or cold!

    The Fortune noodles I used were the Yakisoba Stir Fry Noodle (Hot & Spicy).  I love a little spice, especially paired with Asian flavors.  Don't worry, this isn't too hot, especially because I've added a few ingredients that help balance out the heat.

    Okay, so to keep things pretty easy, I used a few shortcuts.  What kind of shortcuts you ask.  For starters, I used the microwave instructions on the noodles.  Easy and quick.  Also, I used a bag of broccoli slaw instead of cutting up my own veggies.  The only veggie I prepped myself was the cucumber. 

    Let's talk about the egg.  People either love a runny egg on things or hate the idea of it.  I am in the camp of "everything is better with a runny egg".  I'll admit, I tried for a 6 minute egg here.  I wanted it to be of a soft boiled but then I let it sit without cooling it quick enough, and it became closer to hard boiled.  You can do either one you prefer.  I will be making this again soon with a runny egg and will let you know how it comes out.  I predict it will great!

    Don't forget this recipe is served either cold or room temperature.  That means this Easy Asian Noodle Salad is a great option for taking to work, pot lucks and parties.

    Easy Asian Noodle Salad

    Ingredients
      

    • 1 package Yakisoba Stir Fry Noodles Hot & Spicy
    • 1 C broccoli slaw
    • ½ English cucumber
    • 1 scallion chopped
    • 1 T lime juice freshly squeezed
    • 1 egg hard boiled, peeled and halved
    • 1 T peanuts roughly chopped

    Instructions
     

    • Prepare the noodles according to package instructions. Set aside.
    • Shave the cucumber into thin slices with either a mandolin slicer or a Y peeler. Cut each of those into 3 long strips.
    • In a bowl, stir together prepared noodles, slaw, most of the cucumber (keep a few strips for garnish on top), lime juice and scallion.
    • Keep refrigerated until ready to serve.
    • When ready to serve, portion into 2 bowls. Top each bowl with a few strips of cucumber, some chopped peanuts and half of the boiled egg.

      I have never tried these noodles in the past, so, now I am really dying to try them. It is nice to know that they use all natural ingredients in their noodles.
