Preheat oven to 350.
Slice egg rolls open and remove the filling. Chop up 2 off the egg roll wrappers and combine with the filling.
Melt butter in a 10 inch, non-stick skillet. Once butter is melted add egg roll mixture. Cook 5 minutes, stirring occasionally.
In the meantime, crack eggs into a large bowl. Whisk together with half & half. Season with salt and pepper.
Pour egg mixture over the egg roll mixture. Without stirring, allow mixture to cook over medium heat for 2-3 minutes, just until edges are beginning to set.
Place entire pan in oven and bake 20-25 minutes until browned and cooked through.
