Egg Roll Frittata

Ingredients

  • 1 T butter
  • 5 Van's Kitchen Chicken Egg Rolls
  • 6 eggs
  • ¼ C half & half
  • ½ t salt
  • ¼ t black pepper

Instructions

  • Preheat oven to 350.
  • Slice egg rolls open and remove the filling. Chop up 2 off the egg roll wrappers and combine with the filling.
  • Melt butter in a 10 inch, non-stick skillet. Once butter is melted add egg roll mixture. Cook 5 minutes, stirring occasionally.
  • In the meantime, crack eggs into a large bowl. Whisk together with half & half. Season with salt and pepper.
  • Pour egg mixture over the egg roll mixture. Without stirring, allow mixture to cook over medium heat for 2-3 minutes, just until edges are beginning to set.
  • Place entire pan in oven and bake 20-25 minutes until browned and cooked through.
