Egg Roll Frittata - Just a handful of easy ingredients are needed for this meal that makes a tasty brunch entree or breakfast for dinner!
No need to do a double-take, you read that title correctly, Egg Roll Frittata.
I know this idea seems a little outside the box but if you follow me, you already know, every now and then I like to be just outside "the box".
You know what else I like? I like breakfast for dinner! I mean, who doesn't like breakfast for dinner? It's such a great option for kids AND adults.
I was thinking a frittata would be a great way to load the kids up with veggies and chicken. Gosh, why do my kids hate chicken so much? Drives me crazy. Anyway, I hit up Walmart and was going to grab some veggies and things when I noticed the Van's Kitchen Egg Rolls. They were right there next to the meat section in an area labeled "Quick Meals".
Since I like "quick meals", I looked a little closer and found out that in these egg rolls are freshly chopped carrots, onions, celery and cabbage. There were a few varieties; chicken, pork and shrimp. I thought it sounded a little crazy, but I wondered if I could save myself a little time by just deconstructing the egg rolls in place of chopping up and cooking all my veggies. Hmmm. I couldn't shake the idea that it would be great, so I grabbed a 5 pack of Van's Kitchen Chicken Egg Rolls and headed home!
Because I hadn't heard of Van's Kitchen before, when I came home I did my due diligence. I started to research the company and here's what I found:
Van's Kitchen is family owned and operated.
The CEO is actually a working mom, so she gets that us busy moms have to feed our kids quick but with quality ingredients.
I had no idea until I researched that these egg rolls are low in fat and calories so these would be a great snack option for after school too.
I found that the company was started by a family who emigrated to the US from Vietnam. I love a good story of living the American Dream. I'm especially partial to stories of emigration considering my mom came here from Italy.
And the real kicker for me is that when Van's Kitchen found out I was going to be writing this blog post, I got a personalized letter from their CEO! How cool is that?
Anyway, there's your lesson for the day on Van's Kitchen. Back to my easy and time-saving breakfast-for-dinner Egg Roll Frittata. That is why you're here, right?
As I started deconstructing the egg rolls, I couldn't decide if I was going to toss the casing in the mix too, so in the end I used 2 of the 5 egg roll "cases" or "wrappers", whatever you want to call them. I chopped them up finely and mixed them right in the with the filling.
In a non-stick, oven-proof skillet, I melted a little butter and then added the egg roll filling. I let it cook for just 3-4 minutes. I cracked my eggs and mixed them with half and half. I was about to add cheese (because cheese is just a knee-jerk reaction to me with dinner) but decided to skip it. I really didn't think the dish needed it. If you want to, go right ahead and throw in some white cheddar. Pour the egg mixture right on top of the egg roll mixture and let it chill out over medium-high heat for two minutes before tossing the whole thing in the oven.
20-25 minutes later you've got a crazy tasty, super unique, breakfast-for-dinner Egg Roll Frittata!
Now that I know a little bit about Van's Kitchen and feel good about their ingredient list, I can't wait to see what other recipes I can make using these egg rolls.

Egg Roll Frittata
Ingredients
- 1 T butter
- 5 Van's Kitchen Chicken Egg Rolls
- 6 eggs
- ¼ C half & half
- ½ t salt
- ¼ t black pepper
Instructions
- Preheat oven to 350.
- Slice egg rolls open and remove the filling. Chop up 2 off the egg roll wrappers and combine with the filling.
- Melt butter in a 10 inch, non-stick skillet. Once butter is melted add egg roll mixture. Cook 5 minutes, stirring occasionally.
- In the meantime, crack eggs into a large bowl. Whisk together with half & half. Season with salt and pepper.
- Pour egg mixture over the egg roll mixture. Without stirring, allow mixture to cook over medium heat for 2-3 minutes, just until edges are beginning to set.
- Place entire pan in oven and bake 20-25 minutes until browned and cooked through.
