Grilled Fajita Pasta
Everything we love about steak fajitas, grilled steak, onions, peppers etc, transformed into a Grilled Fajita Pasta dish. Try it with chicken too.

- 2 T Chili Powder
- 1 ½ T Sea Salt
- 1 T Smoked Paprika
- 1 T Garlic Powder
- 1 T Onion Powder
- 1.5 lb Flank Steak
- Juice of 1 Lime
- 1 Red Bell Pepper cut into large pieces
- 1 Green Bell Pepper cut into large pieces
- 1 Yellow Bell Pepper cut into large pieces
- 2 medium red onions quartered (or 1 large)
- 2 T olive oil
- 1 C Salsa prepared
- 16 oz Cavatappi pasta or other pasta shape
- 1 C Pepper Jack Cheese shredded
Preheat grill to medium heat.
In a small bowl, combine first 5 ingredients. Mix together well with a fork or whisk. Set aside.
Pound out flank steak to an even thickness. Season steak on both sides with lime juice and 2 T seasoning mixture (1 T each side).
In a large bowl, toss onion and peppers with olive oil and 1 T seasoning mixture.
Grill both the steak and vegetables over medium heat. The veggies for about 8 minutes, just until charred and the steak 6-8 minutes per side, or to desired doneness.
Allow steak to rest about 10 min.
Bring a large pot of water to a boil and prepare pasta according to package instructions. Reserve 1 C cooking water before draining pasta.
Cut vegetables and steak into bite sized pieces.
Return pasta back to pot after draining, over low heat. Stir in salsa. Next, add the steak and vegetables. If mixture seems too dry, add ¼ C reserved pasta water. Stir in 1 C cheese. Allow to cook just 2-3 minutes. Serve warm.
