Grilled Pork & Vegetable Plate

A quick and easy pork and vegetable dinner, ready in under 30 minutes.  The entire recipe is prepared on the grill so the cleanup is as easy as the prep.

Ingredients

  • 1 Smithfield Pork Tenderloin or Loin sliced
  • 2 ears corn
  • 2 zucchini sliced
  • 2 summer squash sliced
  • 12 oz asparagus trimmed
  • 1 T olive oil
  • 2 teaspoon seasoned salt
  • ½ teaspoon garlic powder
  • ¼ tsp black pepper

Instructions

  • Preheat grill to medium heat (350-400 F).
  • Combine seasoned salt, garlic powder and black pepper in a small bowl.
  • Prepare vegetables by slicing zucchini & squash the long way, trimming ends off asparagus and shucking corn.  Bush all vegetables with oil and sprinkle with seasoning blend.
  • Slice pork into 1 inch slices.  Place pork and corn on preheated grill.  After 6-8 minutes, flip pork with tongs.  Periodically turn the corn.  Once pork is flipped, add the rest of the vegetables taking care to place sideways as to not fall thru the grill grates.
  • When pork reaches desired temperature, remove from grill and place on platter. This should only take about another 5-7 minutes. The vegetables are done when tender; add them to the platter with pork.  Cut corn kernels from cob and discard cob.
  • If desired, garnish with chopped parsley.
  • Serve and Enjoy!
