Grilled Pork and Vegetable Plate - Quick and easy dinner, completely prepared on the grill for maximum flavor and minimum clean up.

Is everyone as busy as I am in the spring?
Seriously, it's a bit out of control. Here's what I have going on this week to give you an idea. I have 3 volunteer spots at the kids' school, an overnight camping training for our scout troop, softball practice, soccer practice, softball game, soccer game, volunteering at a consignment sale, gymnastics. Oh, let's not forget getting some actual work hours in and then there is every day life. You know, the cooking, cleaning, laundry etc. And finally, I am hosting a dinner for 12 women at my house for a volunteer group I am part of.
I'm NOT complaining.
It may seem like I am but I am not. I wouldn't change it. I actually love my chaos. But as you can see this schedule leaves little time for some important things like dinner and family time around the table. While I'm looking for convenience meals, I try not to rely on frozen pizzas and things like that too much, I'd rather turn to Smithfield® for a fresh, quick and easy dinner.
I've sung the praises of the Smithfield Marinated Fresh Pork before and yes, I'm doing it again. I guess that says something, if after all these years, I'm still a big fan.

Thankfully, with the weather FINALLY starting to cooperate, I am ready to grill. I love grilling because it's easy clean up - NO PANS!
For this quick and easy meal, I've decided to prepare the entire meal on the grill. Why not, right?
What Makes This Grilled Pork & Vegetable Plate So Easy?

How To Make Grilled Pork & Vegetable Plate
- Prepare vegetables: Apply oil and a simple seasoning blend.
2. Slice pork (for quicker cooking) and place on grill. Add the corn to the grill at this time too.
3. After about 6-8 minutes, flip pork and add the rest of the vegetables to the grill.
4. Once everything is done, remove from grill and serve all on one platter (again, easy clean up).
This recipe is super versatile.
For this version, I used the Smithfield Garlic & Herb Loin Filet but you can use any of the Smithfield® varieties. My kids favorite Smithfield® variety is the Rotisserie Tenderloin and that works perfectly in this recipe too.
The vegetables can also be changed up, just be sure to adjust the cooking times as needed. Some alternate vegetables I've tried in this recipe are cherry tomatoes, brussels sprouts and baby potatoes. Make it your own.

Grilled Pork & Vegetable Plate
Ingredients
- 1 Smithfield Pork Tenderloin or Loin sliced
- 2 ears corn
- 2 zucchini sliced
- 2 summer squash sliced
- 12 oz asparagus trimmed
- 1 T olive oil
- 2 teaspoon seasoned salt
- ½ teaspoon garlic powder
- ¼ tsp black pepper
Instructions
- Preheat grill to medium heat (350-400 F).
- Combine seasoned salt, garlic powder and black pepper in a small bowl.
- Prepare vegetables by slicing zucchini & squash the long way, trimming ends off asparagus and shucking corn. Bush all vegetables with oil and sprinkle with seasoning blend.
- Slice pork into 1 inch slices. Place pork and corn on preheated grill. After 6-8 minutes, flip pork with tongs. Periodically turn the corn. Once pork is flipped, add the rest of the vegetables taking care to place sideways as to not fall thru the grill grates.
- When pork reaches desired temperature, remove from grill and place on platter. This should only take about another 5-7 minutes. The vegetables are done when tender; add them to the platter with pork. Cut corn kernels from cob and discard cob.
- If desired, garnish with chopped parsley.
- Serve and Enjoy!

Girl, you and I are on the same page when it comes to self-serve. I love throwing things on a beautiful platter for guests / family to choose what they want to eat themselves. I've never tried the smithfield variety of loin, it looks fantastic!
