Leftover Roast Beef Hash

A hearty breakfast or brunch that smartly uses up your beef roast leftovers with potatoes, onions and seasonings.

Ingredients

  • 2 Medium russet potato diced
  • 1 Large sweet potato diced
  • ¼ Cup water
  • 1 Tablespoon butter
  • ½ Cup sweet onion diced
  • 2 Cloves garlic diced
  • 2 Ccup beef roast cooked and diced or chopped
  • ½ Teaspoon steak seasoning (or salt, pepper, paprika, garlic powder & onion powder)

Instructions

  • Place diced potatoes in a microwave-safe container with¼ C water. Partially cover but be sure it's vented and cook on high for 5 minutes in microwave. Drain all water. Set aside.
  • Place butter in a skillet over medium-high heat. Once butter is melted add onion and cook 2 to 3 minutes until starting to soften. Add potatoes to skillet. Let potatoes brown a few minutes before stirring. Cook just a few minutes until potatoes are browned on the outside and soft in the middle.
  • Once potatoes are browned, add garlic and diced beef to the skillet. Season with steak seasoning or alternative seasonings. Stir to combine and cook, stirring occasionally, just until beef is warmed.

OPTIONAL SERVING SUGGESTION

  • while hash is cooking, poach or fry eggs to serve atop the hash
  • Add shredded cheese towards end of cooking if desired
