Marinated Pork Loin Sliders

Ingredients

  • 1 Smithfield® Portobello Mushroom Pork Loin
  • 2 C Caramelized Onions made ahead - see below for instructions or jarred
  • 4 oz Herbed Cream Cheese or Gorgonzola cheese spread
  • 4 Ciabatta Rolls
  • 2 Pears thinly sliced

Instructions

  • Preheat oven to 375.
  • Place pork loin in a shallow pan and roast for 20 minutes per pound.
  • Meanwhile, reheat onions in a skillet for 5 minutes over medium heat.
  • When pork loin is cooked thru, let rest 5 minutes and slice thin.
  • Slice rolls in half. If desired, toast the rolls for 5 minutes in the oven at 400.
  • Spread the cheese spread on the top half of the rolls.
  • Layer pork slices, pear slices and onions in the roll and serve.

Caramelized Onions

  • T butter
  • large sweet onions
  • Melt butter in a large skillet over medium heat. Add onions. Let cook 5 minutes. Stir. Continue to cook until softened and caramelized; about 20 minutes. Stirring, but not often, only every 5 minutes. Set aside
