1Tablespoonolive oil
8ouncessliced mushroomscremini
1cupsliced sweet onion
2clovesgarlicminced
1poundground beeflean
1teaspoonsmoked paprika
½teaspoonsalt
¼teaspoonblack pepper
2teaspoonworcestershire sauce
12ouncespenne pasta
3 ½cupbeef broth
½cupsour cream
Chopped parsley
Instructions
Heat olive oil in a large skillet over medium heat. Add mushrooms and cook 2-3 minutes. Add onion and cook 3-4 minutes then add garlic and cook 1 minute more. Add ground beef and cook until no longer pink. If there is excess grease, drain. This shouldn't be an issue if you use lean beef. Season beef/mushroom mixture with paprika, salt and pepper and stir in worcestershire sauce. Add pasta and broth and turn heat to high. Cook 10-12 minutes until pasta is cooked and most of the liquid is absorbed (see note #1). Reduce heat to low and stir in sour cream. Taste for seasoning, adding salt/pepper if needed/desired.
Garnish with freshly chopped parsley before serving.
Notes
Note #1: If you find that your liquid evaporates too quick, before pasta is tender, just add a small amount more.
