One Pot Pasta with Chicken Sausage
A quick and easy, one pot pasta dish, ready in 30 minutes. Use fully cooked chicken sausage of any flavor!

- 1 Tablespoon olive oil
- 12 ounce chicken sausage precooked, sliced (I used garlic variety, but flavor is your preference)
- 1 cup sweet onion sliced
- 2 cloves garlic minced
- 14 ½ ounces canned diced tomato with Italian seasoning *see notes
- 4 ½ Cup vegetable stock or broth
- 12 ounce pasta dry, preferably linguine
- 6 ounce spinach fresh
- Optional: parmesan cheese grated
Heat 1 T olive oil in large pot over medium/high heat. Add cut chicken sausage and brown, about 5 minutes.
Add onion, garlic, diced tomato (with liquid), pasta and stock to pot with sausage. Cover. Bring to a boil. Reduce heat and simmer 10-12 minutes.
After pasta is cooked and most of the liquid is absorbed, stir in spinach and return cover. Cook another 3-5 minutes, just until spinach is wilted.
Stir well to combine.
Serve with grated parmesan cheese if desired.
*flavor profile can be changed up by using diced tomato with chiles
