Oven Roasted Potatoes and Vegetables

Ingredients

  • 8 small red potatoes quartered
  • 4 or 5 medium carrots sliced lengthwise and then cut into large sticks about 1-2 inches long
  • ¼ to ½ pound green beans
  • ½ cup Italian dressing zesty or robusto variety

Instructions

  • Preheat oven to 425.
  • Toss potatoes with ¼ cup of the dressing. Place potatoes on a baking sheet
    and roast 15 minutes.
  • Remove baking sheet from oven and give the potatoes a little turn. Toss carrots and beans with remaining dressing and add carrots and beans to the baking sheet with the potatoes and return to oven. Roast an additional 20-25 minutes. Serve warm.
