Pierogi and Sausage Casserole

- 12 frozen pierogies
- 1 pound ground Italian sausage or sausage removed from casings - use sweet or spicy or a combo of both
- 1 cup sliced sweet yellow onions optional
- 15 ounce Alfredo sauce
- 1 cup shredded cheddar cheese more if desired
Preheat oven to 350℉.
Brown sausage in a non-stick skillet over medium heat, breaking up with wooden spoon as it cooks. After a few minutes, add onions to pan and continue to cook until onions are soft and sausage is cooked through. If desired, wipe excess grease from pan. Or when removing sausage and onion mixture use a slotted spoon to leave most of the grease behind.
Add frozen pierogies to a 9 x 13 baking dish. Using a slotted spoon (to leave grease behind) spoon the sausage and onion mixture over the pierogis. Pour Alfredo sauce over the top. Cover with foil and bake 25 minutes.
After 25 minutes, remove the foil and sprinkle the shredded cheddar cheese over the top. Return to oven, uncovered and bake an additional 10 minutes until cheese is melted.Allow to sit 5 minutes before serving.
