Pork Tenderloin with Pomegranate Salsa

Ingredients

lb
pork tenderloin
2
T
pork seasoning
suggested - McCormick's Grillmates Pork Rub
Salsa
Juice of 2 limes
Pinch
of salt
2
shallots
minced
1
avocado
diced
½
C
pomegranate arils
1
jalapeno pepper
diced
2
T
mint
chopped
2 to
matillos
diced
Pinch
of cinnamon
Instructions
Preheat oven to 375.
Rub pork on all sides with the seasoning rub.
Place on baking sheet or in a shallow baking dish and roast approximately 45 minutes, or until desired doneness.
While pork is cooking, gently stir together all salsa ingredients.
When pork is up to temperature, remove to a cutting board, allow to rest 5-10 minutes before slicing. Top each slice with salsa.
