    Pork Tenderloin with Pomegranate Salsa

    Pork Tenderloin with Pomegranate Salsa - A simple roasted pork tenderloin topped with a quick and fresh salsa featuring pomegranate arils.

    I'm pretty excited about this Pork Tenderloin recipe.  You know I love a pork tenderloin but adding a salsa on top really transforms the pork.  

    Typically I serve pork with a gravy or a sauce but the salsa really seems to lighten and brighten the meal, making it perfect for spring and summer time.

    Pork Tenderloin with Pomegranate Salsa

    Ingredients
      

    • 2 lb pork tenderloin
    • 2 T pork seasoning suggested - McCormick's Grillmates Pork Rub

    Salsa

    • Juice of 2 limes
    • Pinch of salt
    • 2 shallots minced
    • 1 avocado diced
    • ½ C pomegranate arils
    • 1 jalapeno pepper diced
    • 2 T mint chopped
    • 2 to matillos diced
    • Pinch of cinnamon

    Instructions
     

    • Preheat oven to 375.
    • Rub pork on all sides with the seasoning rub.
    • Place on baking sheet or in a shallow baking dish and roast approximately 45 minutes, or until desired doneness.
    • While pork is cooking, gently stir together all salsa ingredients.
    • When pork is up to temperature, remove to a cutting board, allow to rest 5-10 minutes before slicing. Top each slice with salsa.
