Sausage Pierogi Alfredo Bake

- 12 frozen pierogies
- 1 lb ground sweet Italian sausage or sausage removed from casings
- 1 C sliced sweet onions optional
- 15 oz Alfredo sauce
- 1 ½ C shredded cheddar cheese
Preheat oven to 350 F.
Brown sausage in a non-stick skillet over medium heat, breaking up with wooden spoon as it cooks. Once no longer pink, remove from pan with slotted spoon and set aside on plate. Pour off the rendered grease, however, don't wipe out the pan (we're using that to soften the onions).
Place the skillet back over medium heat and add the onions. Cook 3-4 minutes, just until starting to soften. Remove from heat.
Add frozen pierogies to a 9x13 baking dish. Top with cooked onions and sausage. Pour Alfredo sauce over the top. Cover with foil and bake 25 minutes.
After 25 minutes, remove the foil and sprinkle the shredded cheddar cheese over the top. Return to oven and bake an additional 10 minutes.Allow to sit 5 minutes before serving.
