Savory Zucchini Bread
A savory version of zucchini bread. This version is loaded with bacon & cheese!

- 3 Cup flour , all purpose
- 4 teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon baking soda
- 2 large eggs
- 1 Cup milk (I used 1%)
- 3 tablespoon butter , melted
- 3 garlic cloves , minced
- 1 Cup shredded or grated zucchini
- 2 green onions , chopped
- 1 Cup cheddar cheese , divided (I used a cheddar blend)
- 4 -5 slices bacon , cooked and roughly chopped
Preheat oven to 350.
Spray a 9x5 loaf pan with non-stick spray. Set aside.
In a large bowl, whisk together flour, baking powder, salt and baking soda. Set aside. In a separate bowl, whisk together eggs, melted butter, milk and garlic. Stir in the zucchini and green onions.
Stir the wet mixture into the dry mixture, just until combined. Fold in ¾ C cheese and half of the bacon.
Pour mixture into loaf pan. Top with remaining bacon & cheese. Bake 50 minutes.
- Can also be baked in a round cake pan
- Bacon can be omitted
- Cheese can be swapped for your favorite variety
- Add in other fresh herbs to change the flavors a bit
