Sesame Noodle Bowl

Ingredients

  • ½ C rice vinegar
  • 3 green onions sliced
  • 2 T honey
  • 1 T soy sauce
  • 1 teaspoon ginger paste
  • 2-3 teaspoon chili garlic sauce
  • 9 oz precooked chicken
  • 12 oz udon noodles
  • 2 teaspoon sesame oil
  • 2 bell peppers preferably 1 orange and 1 yellow, sliced into strips
  • 2 T cilantro freshly chopped
  • ¼ C peanuts crushed

Instructions

  • Stir together vinegar, green onions, honey, soy sauce, ginger paste and chili garlic sauce. Pour over precooked chicken. Set aside.
  • Cook noodles according to package. Drain and return to pan on low heat.
  • Add chicken mixture to noodles, stir in sliced peppers and cilantro. Cook just 1-2 minutes, allowing the flavors to meld together. Serve in bowls and top each with the peanuts.
