- 2 pounds Chicken Drumsticks approximately 8-10 drumsticks
- 1 bulb Fennel sliced
- 1 medium Onion sliced
- 2 cloves Garlic sliced
- 3 medium Potatoes cubed
- 1 whole Orange zest & juice
- 1 teaspoon Coarse Sea Salt
- ¼ teaspoon Thyme dried
- ¼ teaspoon Black Pepper freshly ground
- 2 tablespoon olive oil
- Optional 2 T chopped parsley for garnish
Preheat oven to 400 °F
Place chicken legs on sheet pan. Spread vegetables around and in between legs on pan.
In a small bowl whisk together orange juice, zest, garlic, thyme and olive oil. Pour mixture over chicken and vegetables. Season everything with salt and pepper.
Roast at 400 for 45 minutes or until chicken is cooked through and vegetables have softened.
