Preheat oven to 325.
Combine all seasonings and zest in a small bowl. Slowly add in just enough oil to form a paste. Rub mixture. Place a meat thermometer in center of roast.
Place roast on a wire rack in a shallow roasting pan or on a baking sheet. Roast for 50 min to an hour or until desired temperature.
Allow roast to rest on counter 5-10 minutes before slicing.
Note: I remove my roast when thermometer reading is 150.
After slicing, sprinkle with fresh parsley and 1 teaspoon orange zest.
