    Spice Rubbed Pork Loin

    Every time I post a pork recipe, I start out by reminding you that I don't really care for pork but I make it for my husband.  Well, it's time that I stop kidding myself and make an admission, so here goes:  I, Christine, like pork!

    I guess before I started cooking pork myself, I had only been served dry, gray, choke it down kind of pork.  Sorry, if anyone reading this has prepared pork for me.  It's nothing personal, but your pork is blah.

     

    Spice Rubbed Pork Loin

    It seems, you all, my readers, are way ahead of me in the admission to loving pork.  I see it in my stats whenever I look at the reports.  Some of the most viewed recipes here and from my Pinterest boards are pork recipes.  As a matter of fact, my Stuffed Pork Tenderloin is my most viewed recipe ever and it has been pinned over 10,000 times.  While that Stuffed Pork Tenderloin seems to be your favorite, one of my all time favorite recipes is actually the Pesto Mozzarella Stuffed Pork Chop.  It's easy and has so much flavor, it's one you should definitely try if you haven't yet.  Did I mention it's easy?

    So now that I've admitted to liking pork, I'll tell you something about this pork loin recipe.  Um, I loved it!  Mmm, hmmm.  Yep, me, loved a pork dish.  It's full of aromatic spices that will have you salivating while it's roasting.  Plus, that little bit of orange zest just makes the whole thing pop!

    I served my pork loin sliced over yellow rice but it could certainly go with mashed potatoes too.

    Ingredients
      

    • 3-4 lb boneless pork loin
    • 2 T ground coriander
    • 2 T ground ginger
    • 2 T brown sugar
    • 1 T onion powder
    • 1 T garlic powder
    • 2 teaspoon ground cayenne pepper
    • 1 T salt kosher
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground allspice
    • 1 teaspoon ground cloves
    • 2 teaspoon dried thyme
    • 1 T orange zest
    • 1-2 T olive oil
    • Garnish:
    • 2 T parsley freshly chopped
    • 1 teaspoon orange zest

    Instructions
     

    • Preheat oven to 325.
    • Combine all seasonings and zest in a small bowl. Slowly add in just enough oil to form a paste. Rub mixture. Place a meat thermometer in center of roast.
    • Place roast on a wire rack in a shallow roasting pan or on a baking sheet. Roast for 50 min to an hour or until desired temperature.
    • Allow roast to rest on counter 5-10 minutes before slicing.
    • Note: I remove my roast when thermometer reading is 150.
    • After slicing, sprinkle with fresh parsley and 1 teaspoon orange zest.

      You have a lot of spices going on in the rub but I am sure they all blend beautifully together making this one delicious pork loin. I agree about the overcooked pork. I want mine cooked (no pink) but juicy still.
