    Easy Tangy Guacamole Dip

    Cinco de Mayo is right around the corner. I don't know about you but I always think of Cinco de Mayo as the beginning.  The beginning of all things I love about the warmer weather.  Even though spring has already started, it seems each year that Cinco de Mayo is the start of outdoor parties, endless days of playing outside and eating dinners out on the patio.  The fun stuff.  So I want to embrace Cinco de Mayo for the hope it gives me of the fun ahead (especially after the horrendous winter we had).

     

    Easy Tangy Guacamole Dip

    While I want to have some fun, entertain and live it up on Cinco de Mayo, the problem I am running into is that I am just too short on time to put together a huge homemade feast.  That's when I got the idea to have an appetizer theme.  You guys know how much I LOVE appetizers.  Who doesn't?! I decided to try out Josè Olè snacks to keep things easy. I was thinking it would be and fun, super easy, plus, I'll be a hero for serving up such delicious, spicy snacks. 

    Easy Tangy Guacamole Dip

    I was thrilled to find that my local Stop & Shop carries the Josè Olè snacks I was looking for, right in the freezer section.  Come to find out they're available at most retailers, nationwide.  The snacks I'm choosing to serve are Chicken & Cheese Taquitos, Beef & Cheese Mini Tacos and Chicken & Cheese Nacho Bites.  Don't worry if you're thinking it's not going to be enough for a crowd, they're protein-packed and very satisfying.

     

    Easy Tangy Guacamole Dip

    To keep with my super easy Cinco de Mayo theme, I'm sharing with you a dip recipe!  It's perfect for dipping all the Josè Olè snacks.  And best of all, it's not totally homemade.  I mean, come on, we're keeping things fun and easy, so why would I want to take all that time mashing and mixing and seasoning? I wouldn't!  I've taken a store bought guacamole and gave it some tang with Greek yogurt.  And to freshen it up a little bit, I've added some fresh lime juice and cilantro.  You're guests will never guess it started with a store bought guacamole.

    Ingredients
      

    • 8 oz store bought guacamole
    • â…“ C Greek Yogurt plain
    • 1 teaspoon lime juice freshly squeezed
    • 1 T freshly chopped cilantro

    Instructions
     

    • Stir together all ingredients. Serve immediately or chill until serving.

      LOVE those little tacos and your dip sounds fabulous! I think your dip will be on the list along with some pico de gallo. I like the appetizer idea!

      I love guacamole. And I'm actually allergic to avocados, but I still eat it anyway. I bet adding the yogurt makes it super creamy. =0)

      We love taquitos, but I don't think I've ever seen the nachos- they look good! I'll have to look for them the next time I'm grocery shopping!
