    30 Minute Chicken Tortellini Soup

     




     

    Hey Christine, thanks for having me, I'm excited to share a recipe with you and your readers! To introduce myself, my name is Deb and my blog is Bowl Me Over. On my blog I share delicious recipes that often end up in a bowl (hence the name Bowl Me Over). I love sharing quick, lighter style meals like Pasta Primavera or a great Ramen Bowl. However I occasionally throw in something delicious like this amazing Blueberry Cobbler - because life is all about balance, right? 😉

    Because the seasons are changing, I decided to share an easy recipe for Chicken Tortellini Soup!

    Chicken Tortellini Soup

    30 Minute Chicken Tortellini Soup

    This delicious soup takes less than 30 minutes to make and is simple and delicious! Using ordinary ingredients that you may even have on hand like carrots, celery, rotisserie chicken, garlic, tortellini, chicken stock and spinach.

     

    Here are the ingredients!

    Here's what you'll need to put this easy soup together!

    I love that it's full of veggies and though it's light, this meal is still hearty and satisfying! 30 Minute Chicken Tortellini Soup is easy to put together - you'll start by dicing the onion, peel and dice the carrot, dice the celery. Then mince the garlic.

    Dice or shred the cooked chicken, give the spinach a rough chop, mince some fresh herbs.

    Heat a heavy bottom stock pan over medium heat. When hot, add a tablespoon of olive oil and then the onions and carrots. Sauté stirring occasionally for a couple minutes, then add the celery.

    When the veggies are lightly browned add the minced garlic and give it a good stir. It will only take about 30 seconds and you'll begin to smell the garlic. Deglaze the pan with a splash of wine, scraping all of the lovely bits off the bottom of the pan.

    Increase the heat to high and add the chicken stock and water, bring to a boil - when boiling add the tortellini. Cook until just al dente. Remove from heat and stir in the chicken, spinach and herbs. Finish with a squeeze of lemon.

    Dinner is done! How easy is that?

    Ingredients
      

    • 1 yellow onion diced
    • 2 carrots peeled and diced
    • 1 stalk celery diced
    • 2 cloves garlic minced
    • ¾ cup dry tortellini I used a cheese tortellini
    • 4 cups chicken stock
    • 1 cup rotisserie chicken shredded or cubed
    • 2 cups fresh spinach roughly chopped
    • ½ teaspoon salt
    • ¼ teaspoon black pepper
    • pinch red pepper flakes
    • 2 tablespoon fresh herbs - basil parsley and/or thyme finely minced
    • ½ lemon squeezed optional
    • 1 tablespoon olive oil

    Instructions
     

    • Dice the onion, peel and dice the carrot, dice the celery, mince the garlic.
    • Dice or shred the cooked chicken, give the spinach a rough chop, mince some fresh herbs.

    • When the veggies are lightly browned (about five minutes total) add the minced garlic and give it a good stir. It will only take about 30 seconds and you'll begin to smell the garlic. Deglaze the pan with a splash of wine, scraping all of the lovely bits off the bottom of the pan.
    • Increase the heat to high and add the chicken stock and water, bring it to a boil. When boiling add the tortellini. Follow the package directions and cook until just al dente.
    • Remove from heat and stir in the chicken, spinach and herbs. Finish with a squeeze of lemon.

      I think that the best soup is homemade but for some reason I never make it. I never thought that I can use tortellini in a soup either.

      I've only served chicken tortellini soup from a can. Yes, that's sad. My hubby will be pleased eating this homemade version.

      I like tortellini in certain soups. This one looks terrific. I have one similar but don't use celery, hubby would like yours because it has celery.
