I know, it's close race with macaroni and cheese, but let's get real, it's all about the melty cheesy goodness mixed with buttery toasty bread that wins every time. The only thing better than grilled cheese sandwiches is adding other components to grilled cheeses. The possibilities are endless, think about how many cheeses, breads, spreads and meats you can mix and match? Okay, before your mind starts going in all different cheesy directions, let me bring you back to why you are here, the Creamy Grilled Roast Beef Sandwiches!
I know I am not alone when I say I sometimes don't like making a big meal in the summer. These Creamy Grilled Roast Beef Sandwiches come together in minutes. They make a great lunch but they are also hearty enough to serve up for dinner. Add a quick side salad and make it a complete meal.
My favorite bread for grilled sandwiches (or in general) is a nice round Italian bread, sliced thick. It's no secret, we Italians, love bread. My grandmother always had a loaf of bread out and I always loved walking in her house , I knew immediately she'd be cutting a piece and throwing a slab of cheese on it. We didn't even have to ask. She just wanted to shove bread and cheese down our throats and I was more than happy to oblige. To this day, she still has my uncle drive into Boston once a month to buy her the loaves of bread. She keeps them frozen and pulls one out at a time. I don't know what they do to their bread in the city, but it's like no bread I have found anywhere else. Since I'm not lucky enough to have someone trek into the city for me monthly, I make do with store bought Italian round bread.
I knew I wanted to make this creamy but I wasn't sure how I wanted to get there. At first I was thinking hummus and then maybe an herbed cheese spread. In the end, I decided cream cheese was the easiest route. I bought the chive and onion flavor, that way I didn't have to season it with herbs or anything.
I was going to use fresh mozzarella, because, well, it's mozzarella (the best of the best in my opinion) but for some reason I had slices of Provolone in my fridge. I wish I could remember why I bought it. That's not a cheese I typically buy just to have on hand, so clearly I forgot about something awesome I was going to make (I blame mommy brain). Oh, plus Provolone melts great!
The most labor intensive part of this meal is getting a few slices of red onion together. If you can't handle that, well, maybe you should be ordering out. Oh settle down, I'm joking. Or am I?
