    Slow Cooker Pulled Pork

    Pulled pork is a favorite of mine to make because:
    A. It's super easy in the crockpot
    B. Husband loves it
    C. Kids will eat it
    A+B+C= happy ME
    There are alot of people who try to make it lean by using pork tenderloin or a lean cut like that but honestly, if you're going to make yummy pulled pork, you have got to use something that has a little fat in it.  Otherwise you just get dry pork that you put BBQ sauce on. Yuck, who wants that? Not me.  I always use a pork butt, sometimes it is labeled Boston butt.  Please know, this is not the actual butt of a pig.  Alot of my friends refuse to buy it and say "I'm not cooking a butt". Give me a break, I promise it is not!
    One important thing I will say about making this super easy, is use a liner in your crock pot.  I have tried a few and (no I'm not being paid to say this) none have held up as well as the Reynolds brand.  But be my guest, get the generic bag and have fun cleaning up your crock pot afterwards.

    Here's what you need:

    • Pork butt (sold where the roasts are sold)
    • 2 medium size onions
    • ½ C brown sugar
    • Pork Seasoning, I used McCormick Grillmate dry rub
    • 12 oz of Dr. Pepper or Root Beer
    • 1 bottle BBQ sauce
    • crock pot liner

    Here's what you do:

    1. Line your crock pot.
    2. Dice onions and place on bottom of crock pot

     

    3. Trim big bits of fat off roast.  Season well with dry rub and brown sugar.

    4. Place roast in crock pot on top of onions. 
    5. Pour Dr. Pepper on top of meat.
    6. Cover and cook on low for 6-7 hours until meat falls apart when poked

    7. Remove meat from crock pot.  It probably won't come out in one piece.  Remove most of the liquid from the crock pot.  I prefer to leave a bit of the cooking juices in there for flavor (just enough to cover the bottom of the pot).

    8. Using two forks, "pull" the pork in to shreds, being sure to remove any bones that might be in there.

    9.  Add pork back to the crock pot and add bottle of your favorite BBQ sauce.  Cook on high for another 45 minutes until sauce has thickened up a bit.

    My favorite way to eat this is in a bun but you can serve it over mashed potato, over rice, in a taco....
    I served mine with a roasted corn salad, recipe to be added shortly
