    Sausage Gravy over Biscuits

    Creamy Sausage Gravy served over biscuits make a quick weeknight meal.

    Let me start by telling you, if you have a Pinterest board of which the theme is "quick" "easy" or "weeknight" meals, you should immediately pin this recipe there.  When I say this meal is quick, I mean super fast.  The most time consuming part is the biscuits baking and we all know that is pretty darn quick.

    I keep telling you how I love that I started to make a weekly meal plan.  And I do.  I swear, I do.  But sometimes (usually towards the end of the week) I look at my meal plan and would rather just make a short cut meal rather than spend any time in the kitchen.  Even us "love to cookers" need a break sometimes, right?

    I was originally going to use the Italian sausage I bought for Sausage Cacciatore, but time got away from me and next thing I knew it was 7 PM and I just wanted to throw something together as quickly as possible.  A look in the fridge was pretty disappointing, but I had biscuits and I had sausage so this made sense.

    Of course this is one of those meals that doesn't look pretty but man oh man does it taste good.  You can opt in or out of slopping a big heap of mashed potatoes on the biscuits before drenching in this savory gravy.  We went for it! Honestly, I don't really know why you wouldn't, but whatever.

    Ingredients:
     
    • 1 can Pillsbury (or other brand) refrigerated biscuits
    • 1 lb bulk pork sausage, or links with casings removed
    • ⅓ C flour
    • ½ teaspoon seasoned salt
    • ¼ teaspoon ground black pepper
    • 3 C milk
    Directions:
    1. Prepare biscuits according to package directions.
    2. While the biscuits are cooking, brown sausage in large skillet over medium/high heat, stirring often.
    3. Combine the flour, salt and pepper in a bowl.  When sausage is no longer pink, whisk in the flour mixture and let cook 1 minute.  Gradually whisk in the milk.  Cook until thickened, whisking constantly.  Check for salt and pepper, adding if necessary.
    4. Serve over split biscuits.
    Optional:  Place a scoop of prepared mashed potato on biscuit prior to adding sausage gravy.
