    Time flies during the holiday season doesn't it?  I don't just mean the dates go by fast.  I mean, literal time.  Like one minute it's noon and the next minute it's like 5:00 pm and you realize you don't have dinner planned yet.

    I am generally not a person who gets stressed about dinner.  I keep a pantry stocked, a freezer full and my fridge is always abundant with cheese.  I can always whip something up even if I have to deviate from my original meal plan (which happens more often than I'd like to admit).

    However, this holiday season is proving to be just a bit busier and a little more hectic than other years.  In the middle of all the holidays, we also have to cram in all 5 of our birthdays.  This year, just for the fun of it (or because we are nuts), we are also jamming in a family trip to Florida, for a full week!  Yup, right smack dab in the middle of holiday season.  Or as we call it, The Hadden Family Birthday Season.

    So, on top of the regular holiday parties, shows and shopping, I've added in packing,  preparing the kids,  booking rental cars, dinner reservations, park passes, fast passes, house rental and about a million and one other things.  You know.... EVERYTHING.

    You probably think I'm at my wits end by now but I'm telling you, it's manageable.  All of it is manageable as long as you prepare just a tiny bit.  By prepare, all I mean is keep a few key ingredients on hand.  For me, this season, each week, I'm grabbing an extra package of dinner rolls (which are always on sale this time of year - bonus), a rotisserie chicken and McCain Sweet Potato Fries while I'm out doing holiday shopping.  You can find these ingredients pretty much anywhere you find yourself shopping during the holidays; I just happen to grab mine at Shaw's.

    These ingredients might seem pretty random to you but I assure you, they are not.  Rotisserie chicken is great because its already cooked and you can do so much with it.  The rolls make the must have list because sandwiches are so easy to make.  I always buy the small dinner rolls because the kids tend to like sliders more than a big sandwich.  And the McCain Sweet Potato Fries?  Well, I have yet to meet any kind of sandwich or slider that doesn't pair well with a yummy sweet potato fry!  Am I right? 

    The McCain Sweet Potato Fries get all crunchy on the outside, just how I like them.  I can feel good serving them because they are made with real sweet potatoes and not artificial colors and flavors.

    With these staples on hand, you can go in a number of directions.  This month, I just happen to have a ton of jarred sauce on hand (thanks to a big sale a few weeks ago), so heading in an Italian-ish route made the most sense.

    To prepare these EASY Chicken Parmesan Sliders all you have to do is place the rolls in a 9x13 baking dish, layer the ingredients and bake for 20 minutes.  Does that sound easy enough to you?

    A few notes on EASY Chicken Parmesan Sliders:

    • Use dinner rolls that come attached to each other rather than loose rolls
    • Brush butter over the tops of sliders just before baking to add just a little something
    • Season the butter with either garlic bread seasoning or Italian seasoning for even more flavor (highly recommended but not mandatory)
    • Leftover chicken or rotisserie chicken works great in this recipe but if you prefer a breaded variety, cook up some frozen tenders or nuggets instead

     

    These EASY Chicken Parmesan Sliders with McCain Sweet Potatoes are a great way to make holiday entertaining/meal preparation a little bit easier.  Your guests won't soon forget the delicious flavor combination!

    Ingredients
      

    • 12 dinner rolls
    • 2 C cooked chicken rotisserie is great
    • 1 C marinara sauce
    • 1 C shredded mozzarella
    • ¼ C shredded parmesan cheese
    • Optional:
    • 1 T butter
    • 1 teaspoon Italian seasoning or garlic bread seasoning

    Instructions
     

    • Preheat oven to 350.
    • In a small bowl combine cheeses.
    • Prepare a 9x13 baking dish with either butter or non-stick spray. Place bottom of rolls in dish and layer cheese, chicken and marinara. Place tops of rolls on.
    • If desired brush tops of rolls with either melted butter or melted butter with seasoning added.
    • Cover with foil.
    • Bake 10 min. Remove foil and bake an additional 10 minutes.
