    Egg Free Chocolate Chip Banana Bread
    I have the most exciting news today!  I mean, besides the fact that I made an amazingly delicious Egg Free Chocolate Chip Banana Bread. Well, it's probably only exciting to me, but I'm totally going to share it with you anyway, and hope that you can try to understand what it means to me.  As you all know, my daughter has outgrown her milk allergy (yay), leaving her with 6 food allergies (boo).  If you follow along with me, you know that my biggest struggle with her allergies is with soy.  It comes in so many shapes and forms, it's tough to keep track of.  Soybean oil and soy lecithin do not contain the protein that is usually troublesome, meaning that most with soy allergies can tolerate them.  My Nora, however, has always had a reaction to soy lecithin.....UNTIL NOW!  That's right, she is still allergic to soy, itself, but she can now tolerate soy lecithin!!!!!

    Just to give you an idea of how exciting this is, I'll share with you some common items that Nora has always wanted but they contain soy lecithin: frozen waffles, Ritz crackers, store bought bread and she was most excited to try M&M's today!!!  I have never seen a happier face than when she ate her first M&M.

    So that's my great news, the bad news is she is still allergic to eggs.  On a daily basis, an egg allergy is tolerable, but when I want to make baked goods, it presents a problem.  I've done a lot of playing around with egg substitutions and most have been flops, but this Chocolate Chip Banana Bread is a winner!

    Funny thing about banana bread, it can be breakfast, or an afternoon snack or dessert.  I prefer mine mid morning with a steaming cup of coffee.  My son, has been taking his to school for snack and my husband, well, he'll grab a piece any old time he feels.

    So tell me, when do you most like to eat banana bread?

    Don't think for one second that this Egg Free Chocolate Chip Banana Bread is only for those with allergies, because it's good enough that your family won't even know it's missing eggs!

    Egg Free Chocolate Chip Banana Bread

    Egg Free Chocolate Chip Banana Bread

    Ingredients
      

    • 1 ½ C flour all purpose
    • 1 t baking soda
    • 1 t salt
    • ½ C granulated sugar
    • ¼ C brown sugar
    • 3 bananas ripened
    • ½ C applesauce
    • 4 T butter melted (or dairy free spread if dairy free is desired)
    • ½ t vanilla extract
    • ¼ C mini chocolate chips dairy free if desired

    Instructions
     

    • Preheat oven to 350.
    • In a large bowl, combine flour, baking soda, salt and sugars.
    • Mash bananas in another bowl. Add the melted butter, vanilla and applesauce to the mashed bananas.
    • Pour the banana mixture into the dry ingredients and stir together, just until combined.
    • Fold in chocolate chips.
    • Pour into greased loaf pan and bake 40-50 minutes, until a toothpick inserted into the center comes out clean.

      I TOTALLY understand your struggle!! Both my kids have allergies. My Little who is 6 Months is nursing, which means No egg, dairy, soy or gluten for me so that I can keep her safe! It's hard but we eat really healthy. My 2.5 yr old had a dairy and egg allergy but outgrew both by 2. How old is your Nora?

        Oh Sarah, that's so wonderful to hear a story of outgrowing allergies, it give me hope. Nora is 2 1/2. We outgrew dairy, so I'm hoping we can outgrow some more. We still have egg, soy, tree nut, peanut, chickpea and sesame. You're right, the upside to allergies, is you get forced to eat healthy, whole foods. Good luck!!!

        Yes Laurie, it was a teary moment....for like a second. Because now every 30 seconds it's "M M...pweeease?" It's the first thing she has asked for every day now.

      OK Christine, I'm not sure if you know what you've done here, but you've combined my two favorite doughs and made them eggless... meaning I can eat them raw without guilt. This batter would never even make it to my oven.

      Sorry hear about the egg allergies. Food allergies are so hard to figure out and they sometimes change with age. Hopefully as she gets older they will disappear. My daughter's strawberry allergies disappeared. Always keep experimenting as you did in this wonderful recipe. I can't wait to try it. I put pineapples in my banana bread because it keeps it so moist.
