    Spicy Orange Chicken Stir Fry  -  Stir Fry is always a good weeknight choice because it's loaded with veggies and comes together so quickly and effortlessly.

    Now that the holidays are long gone, has life slowed down for you?

    Nah, me either.

    So, I'm here to remind you of how easy and delicious a stir fry dinner can be.  I used to make stir fry all the time.  That's why I was so surprised when I glanced through my blog and realized, I've only ever posted two stir fry recipes (Beef & Bean Stir Fry and Eggplant Stir Fry).

    I mean, don't get me wrong, they are super delish, but only two?

    How could that be?

     

    Spicy Orange Chicken Stir Fry

     

    Stir Fry is super versatile.  You can always change up the veggies to whatever you have on hand or whatever your family happens to be into that week.

    For my Spicy Orange Stir Fry, I chose mini sweet peppers and sugar snap peas.  As I was browsing the abundant produce department at BJ's Wholesale Club, they just happen to catch my eye.  Those mini sweet peppers are so bright and beautiful, how could I pass them by?

    I recently noticed on my son's school lunch account that he was buy a small bag of chips everyday for $1! That's $20 a month in chips!!! I'd much rather spend $12.79 and more chips!

    SPICY ORANGE CHICKEN STIR FRY

    Some other things in my cart this week:
    Turkey & Cheese fresh from the deli. Cornbread & bagels from the bakery, Sugar Snap Peas, coffee creamer, boneless chicken tenders

     

    A few notes on my Spicy Orange Chicken Stir Fry:

    • Have all of your ingredients ready to go before you start cooking because stir fry moves quickly
    • When I say spicy, I don't mean, burn your mouth off spicy.  Adjust the sriracha to suit your taste.
    • The orange juice can be fresh or bottled
    • Orange zest can be omitted but zest does add a good amount of fresh flavor so I suggest using it
    • If you don't have sugar snap peas, I think green beans or asparagus would make a great substitution

    Spicy Orange Chicken Stir Fry

    Spicy Orange Chicken Stir Fry

    Servings 4

    Ingredients
      

    • ½ C orange juice
    • 1 T cornstarch
    • 2 T soy sauce
    • 1 T orange zest
    • 1 T sriracha chile sauce
    • 1 lb chicken tenders cut into bite sized pieces
    • 2 T vegetable oil divided
    • 1 C sliced red onion
    • 10-12 sweet mini peppers halved or quartered into strips
    • 1 ½ C sugar snap peas
    • Salt
    • 6 oz stir fry noodles prepared according to package instructions, or 2 C rice

    Instructions
     

    • In a small bowl stir together orange juice, cornstarch, soy sauce, orange zest and sriracha. Set aside.
    • Season chicken with salt.
    • Heat 1 T oil in a large high sided skillet over high heat or wok.
    • Add vegetables to pan and cook, stirring, for about 3-4 minutes. Remove veggies from pan and set aside in a bowl or on a plate.
    • Return pan back to stove and heat remaining 1 T oil. Place the chicken in the heated pan. Cook, stirring, until chicken is cooked thru. About 5-7 minutes.
    • Return veggies back to pan and pour sauce into pan. Stir well to combine. Add noodles and toss to be sure everything is coated well with sauce. Cook just 1-2 minutes until sauce has thickened up.
    • Serve.
    • If desired, garnish with cashews, peanuts or cilantro.

      This sounds delicious! I haven't made a stir fry in forever!! We love BJ's too!!Love stocking up on kids stuff for school! What a huge savings!

      We have stir fry at least once a week because it's so easy and healthy. I'll have to work this spicy orange stir fry recipe into our menu plan very soon! Being able to find reasonable prices on large quantities such as those at BJ's are a must for our family of 6!

      Im telling you .. me and you are two peas in a pod! I love BJ's and last time I was there I picked up meatballs too! This recipe is great!! Im almost positive I have everything on hand for this to make for dinner tonight! Which is perfect bc I had no ideas for tonight otherwise haha!
