    Creamy Smothered Chicken

    This creamy smothered chicken comes together in under 30 minutes, making it a perfect choice for a weeknight meal.

    I was going to make Marsala.  I bought the chicken.  I bought the mushrooms.  I bought the wine.   Not only did I not buy the wine, I didn't realize it until I started getting everything out of the fridge to make dinner.

    On a normal day, no big deal. I'd move on and make something else. For some unknown reason, I was having a hard time focusing and I had zero motivation to think up something new.  Okay, I know the reason.  It's called children.  Specifically a potty training 2 year old who thinks she runs the joint and a 5 year old who is scared of his own shadow and can't move from room to room without having a meltdown because there might be monsters.  This, my friends, day after day, will wear you down.  I'm human, I get frustrated and my mind gets frazzled.  So, ladies and gentlemen, I turned to Google.

    Seriously.  Yep, that's where I got the idea for this recipe.  I entered "chicken, mushrooms, easy meal" in the search box and it brought me to the Betty Crocker website to a recipe called Chicken Breasts with Creamy Mushroom Gravy.  It looked good.  It sounded good.  But, sigh,  it called for Bisquick.  I'm not sure I've ever owned a box of Bisquick.  I'm sure it's perfectly fine but I just have never needed it before.  At this point, I was either going to figure out a way to make this recipe or I was going to order a pizza.

    After reading through the recipe, I decided Biquick was not a necessity (plus I really wasn't in the mood for pizza).  Instead of the Bisquick I made a mixture of flour, baking powder and salt.  I also made the judgment call that this chicken deserved to be swimming in onions, not just lonely mushrooms.

    Oh, and by the way, this goes great on top of mashed potatoes and along side an arugula salad.

    So the moral of the story is, a frustrating, disastrous day with roadblock after roadblock can and usually does end up with something good.  I'm claiming this Creamy Smothered Chicken as my something good.

    Ingredients
      

    • 4 boneless skinless chicken breasts pounded thin, as for cutlets
    • ½ C flour
    • 1 T baking powder
    • ½ teaspoon salt
    • ½ teaspoon garlic powder
    • 1 egg beaten
    • 2 T olive oil
    • 1 T butter
    • 5 oz baby portobello mushrooms sliced
    • 1 sweet onion sliced
    • 1 C milk
    • 2 teaspoon soy sauce

    Instructions
     

    • In a shallow dish combine flour, baking powder and salt. Remove 2 T of flour mixture and set aside for now.
    • Add beaten egg to a second shallow bowl.
    • Dip chicken in egg then flour mixture to coat.
    • In a large, nonstick skillet, heat 2 T oil over medium heat. Add chicken and cook 4-5 minutes, until brown. Turn chicken over and cook until chicken is browned and cooked through. Remove chicken from skillet and set aside (or keep in oven to keep warm).
    • Return skillet back to medium heat and add butter, onions and mushrooms. Cook a few minutes until browned and soft. Sprinkle the remaining flour mixture over mushrooms and onions and stir. Allow the flour to cook out for 1-2 minutes, stirring. Add milk and soy sauce and stir well. Bring to a bubble and then simmer a few minutes until sauce is thickened. Check for seasoning and add salt/pepper as desired.
    • Pour mushroom mixture over chicken to serve. Garnish with chopped green onions or parsley if desired.
