Now,before you get all judgy and tell me nachos can't be a meal, take another look at the title. Grilled Vegetable Nachos. Yep, vegetables. Vegetables are healthy. Nachos are.....well not as healthy. So these Grilled Vegetable Nachos are the perfect balance of healthy and sinful!
This meal was never meant to make it to the blog. I mean, it was going to be my dirty little secret that we ate nachos for dinner. But, something I have to tell you - I'm terrible at keeping secrets. Even my own! I have to tell you, while I was cooking, I never really had a plan on where it was going. All I knew was that I wanted nachos and I was trying my hardest to make them filling enough for an entrĂ©e and I wanted to be able to justify it with vegetables.Â
The plan sort of kept rolling along and I just kept adding and adding and the result was nachos so filling that we didn't even come close to eating them all. If I'm being honest, only 3 of us were eating that night, and we didn't even make it halfway through the pan. So just know they are VERY filling. Because I chopped my veggies pretty small, I decided to grill them inside on a grill pan. If you choose to cook on you outdoor grill, I would suggest not cutting your veggies too small before cooking, or cook them on an outdoor grill basket

While my veggies were grilling, I realized I had some shaved steak in the fridge. I had picked it up on a whim while I was at the butcher shop and didn't have any specific plan for it, so when the veggies came off the grill, I seasoned the shaved steak with some paprika and seasoned salt and plopped that on the grill pan too. I was basically just crossing my fingers and hoping for the best with this.

When I put out a giant pan of nachos on the table, my husband was surprised, to say the least, that I was serving nachos for dinner. In the end, it all worked out and I think it ended up being a fun way to get veggies into everyone.
Oh, and here's a nice shortcut alternative. If you have beef or chicken leftover from last night's meal, just use that. Nachos are a great way to liven up leftovers!

Grilled Vegetable Nachos
Ingredients
- 2 T olive oil
- 1 teaspoon Seasoned Salt divided
- ½ t black pepper freshly cracked (divided)
- 1 zucchini
- 1 summer squash
- 4-5 asparagus stalks
- 1 orange or yellow bell pepper
- 1 lb shaved steak optional: omit if you prefer vegetarian version
- ½ teaspoon smoky paprika
- 9 oz tortilla chips
- 2 C shredded cheese cheddar, cheddar jack or monterey jack
Instructions
- Preheat oven to 350.
- Chop vegetables into bite sized pieces. Toss in bowl with oil,
- ½ t seasoned salt and ¼ t black pepper until well coated.
- Heat non stick grill pan over medium/high heat.
- Grill vegetables until just about to soften and vegetables develop good grill marks (about 5-7 min) Set vegetables aside.
- Season shaved beef with remaining ½ teaspoon seasoned salt, ¼ teaspoon black pepper and ½ teaspoon paprika. Add to grill pan and cook until steak is cooked through, about 4-5 minutes. Set aside.
- Place a layer of chips on baking sheet (lined w/ non stick foil is preferred but not necessary). Top with some shaved steak, vegetables and cheese. Add another layer of chips and again top with vegetables, steak and cheese.
- Bake until cheese is melted, about 7-12 minutes.
- Serve immediately with optional toppings of: guacamole, sour cream, salsa.
