    Peach and Zucchini Salad

    Peach and Zucchini Salad  -  A simple, no-cook, side dish; light, refreshing and perfect for summertime.

    I know, that sounds like a weird combo, Peach and Zucchini Salad.  But yep, that's what I said. Peach.  And Zucchini. Together.  In one dish.  It sounds weird, but man, it tastes so good.  Tis the season for fresh ingredients etc., right?

    Oh and did I mention, you don't cook it?  Yep, it's totally a NO COOK dish.

    Perfect dish for those hot nights.  It's really a side dish, so you'll probably have to cook something to go with it....or do you?  If you are smart, you have caught on to batch cooking chicken by now.  Grill up a bunch of chicken at the beginning of the week and then refrigerate it and use it as needed throughout the week.  I was not smart enough to have some pre cooked chicken on hand, but it only took me a minute or two, to grill up a simple boneless chicken breast, seasoned with seasoned salt and pepper.

    While my chicken was cooking, I shaved the zucchini.  Shave you say?  You can do this one of two ways.  You can use a mandolin slicer.  You guys know by now, how much I love my mandolin.  I actually didn't use my mandolin for this though (gasp!).  I used a vegetable peeler, you know, one of those Y shaped ones.  It gives paper thin slices, which are perfect for this salad.

     

                                                        

     

    The inspiration for this dish came from a recipe titled Grilled Chicken with Nectarines, Cucumber & Corn that I found on Woman's Day.  Clearly, I made changes, but it was this recipe that got the wheels turning.

    If you are unsure how to slice peaches, I found this video on YouTube.  I actually googled "how to cut a peach" because I wasn't sure that the way I was doing it was the best.  I was pretty much doing it the way everyone else is.  I guess there is no magic way to get that pit out.

    Ingredients
      

    • 3 T olive oil
    • 1.5 T white wine vinegar
    • 2 peaches sliced
    • ½ red onion diced
    • 1 zucchini shaved into paper thin slices
    • 6 oz. canned corn drained
    • 2-3 fresh basil leaves sliced thin
    • ÂĽ teaspoon salt
    • â…› teaspoon black pepper

    Instructions
     

    • In a small bowl whisk together oil, vinegar, onion, salt and pepper.
    • Place peaches, zucchini, corn and basil in a larger bowl. Pour vinegar mixture over everything. Toss gently to coat everything.
    • Serve.

      Only you can come up with a creative combination like peaches and zucchini, LOL! It is so creative and an absolutely delicious looking salad. I think it would be perfect on its own as a lunch meal or even a post workout snack. Great recipe, Christine.
