One of the first things I made for this blog was a Mexican(ish) Shepherd's Pie. It's basically a Shepherd's Pie crossed with a taco, or a taco casserole. Last week when I asked the family what their requests for dinners were, our oldest shouted Mexican Shepherd's Pie! So here I am making it again.

I call this Mexican(ish) because in my family's eyes this is Mexican flavor, but I'm not sure that just because I'm using a taco seasoning that actually makes it Mexican, but I'm thinking I can skate by with Mexican-ish.
Oh my gosh, I need to tell you the best thing I'm changing from the original recipe post! I've turned this into a ONE POT MEAL! Yep, one pot! How great are one pot meals? What's worse than making a big satisfying meal and then glancing over your shoulder and seeing all those dirty pots and pans that need washing? Buzz kill!
**Since first posting this recipe, I have upgraded my big skillet that I make my one pot meals in. I'm now using a Calphalon, 5QT non-stick skillet. I am madly in love with it.
Do your kids eat enough beans? If you say yes, you've got to give me the secret. If not then just know, this recipe is a great way to sneak in some beans. You could also shred some carrot if you wanted to sneak that in too. Casseroles are generally a great way to sneak in some healthy stuff and the kids are usually none the wiser.
In order to keep this a truly simple meal, I use store bought, refrigerated mashed potatoes. What's the point in having an easy recipe if you have to spend a ton of time preparing the components, right? I know, judge me if you will, but whatever, it's a time saver. If you have all that extra time, more power to you.
So here's all it takes:
Start off with browning your lean ground beef or ground turkey in an Calphalon, 5QT non-stick skillet., add taco seasoning and water and cook it up a few minutes. Then you add your corn, beans and salsa and stir it all together. I like to top that layer with a bunch of cheese and then throw the mashed potatoes on top. Of course, I throw a little extra cheese on top, just because it looks a little more inviting. Pop the whole thing in the oven and a half hour later you've got dinner! As my 5 year old would say "easy peasy lemon squeezy"!
