Since I'm just starting this blog, I figured I'd post a few of the recipes I've done in the past that were hits with the family. In the colder months I am a fan of a good old fashioned Shepherd's Pie. Just throwing in whatever vegetables I have on hand. So even though it is summer for some reason I am craving a Shepherd's Pie but needed to give it a twist. So voila, the mexican pie is born.
Ingredient List:
- ground beef or turkey (about a pound to a pound and a half)
- 1 packet taco seasoning
- 1 can corn (drained)
- 1 can black beans (or red beans if that is your thing) rinsed
- enough mashed potato to cover the pan (I used 1 package of premade refrigerated mashed and it was the perfect amount)
- ½ jar salsa
- 2 C shredded cheese of choice, (taco blend, monterey jack, cheddar etc)
Here's what to do:
Preheat oven to 350.
Cook your meat until no longer pink, drain grease and return to pan. {While your meat is cooking prepare potatoes.} Add taco seasoning and half the amount of water called for on the seasoning packet, cook for a few minutes on medium heat until sauce starts to thicken. Add corn, beans and salsa and stir together until well incorporated.
Why God Why says
Shepherd's pie is lamb. Cottage pie is beef. If anything call it a casserole, nothing shepherd's pie about it.

Thanks for the input. I grew up with Shepherd's Pie being ground beef. I don't declare to be an expert, just passing along yummy flavors. My whole thing is having fun in the kitchen, so let's just have fun. 🙂
