    Jalapeno Peach Pork - Just a touch of heat  balances out the sweetness of peach preserves in this easy pork dish.

    Jalapeno Peach Pork If you are a fan of my Facebook Page, you know I've been in the market for a new non stick skillet/fry pan.  The one I've been using is about 10 years old and while it still was getting the job done, it was showing quite a bit of wear and things were starting to stick.  I'd say 10 years was a good run.  My skillet is, by far, the most used pan in my house so I knew it was time to move on.  I hate to admit this actually makes me sad.

    Today, I am happy to report that I have found a new pan!  I've been searching high and low for a new one that was basically the same as my old one.  All the ones I saw in the stores looked really big.  I bought one, sight unseen on Amazon.  I thought it was the same size as my previous one but it turns out, this one is about the same size as the ones I've been seeing in the stores.  I'm starting to wonder if the smaller size one even exists anymore.  Jalapeno Peach Pork As soon as the box was delivered to my doorstep I started thinking of things to cook in it.  I had remembered seeing a recipe in Simple & Delicious magazine for a Spicy Peach Glazed Grilled Chicken and decided I could take the idea of that but make it sautĂ©ed instead of grilled.  Oh, and with pork instead of chicken. So the great thing I realized about the size of this new pan is that I no longer have to brown my meat in batches.  This pan fits 5 pieces of pork or chicken in it perfectly!  This is great for me!  I highly recommend the pan if you are in the market for one. Jalapeno Peach Pork Anyway, on to the recipe.  All you've got to do is sautĂ© the pork and then brush on the sauce of peach preserves, jalapeno peppers, chili garlic sauce, and olive oil .  And then.....oh wait, that's it.  Seriously, it's that easy. I served my pork over quinoa but it would also be great over rice or couscous.

    Ingredients
      

    • 5 boneless pork loin chops
    • ½ teaspoon salt
    • ÂĽ teaspoon black pepper
    • ½ C peach preserves
    • 1 large jalapeno pepper finely chopped
    • 1 T soy sauce
    • 1 T chili garlic sauce
    • 1 teaspoon olive oil + 1 T olive oil divided

    Instructions
     

    • Heat 1 T olive oil in large non stick skillet. Season pork with salt and pepper on both sides. Add seasoned pork to pan and cook about 4 minutes until browned.
    • Stir together, in a bowl, preserves, jalapeno, soy sauce, chili garlic sauce and 1 teaspoon olive oil.
    • Flip pork over and brush with ½ the sauce mixture. Allow second side to brown and then flip again and brush the remaining sauce mixture. Reduce heat and cook until pork is cooked through, about 1-2 minutes more.
    • Serve with rice, couscous or quinoa.

      Sounds amazing! Jalapenos and peaches are 2 of my favorite ingredients and I love sweet and spicy paired together!
