With all the grilling going on in the summertime, I think sometimes, the slow cooker gets overlooked. It's actually a great way to avoid the oven or the stove top in those hot summer months. I even have a few friends who plug theirs in out on their deck so they literally get no heat in their kitchen while cooking. I haven't tried that yet, but maybe this summer I will.
I was guilty too, of overlooking my slow cooker lately, until last week. I was excited to have won a copy of Fix-It and Forget-It, Feasting with your Slow Cooker from a giveaway I entered over on Prairie Gal Cookin (thank you again, Ashleigh!). When it arrived in the mail, a recipe for Tangy Barbecue Sandwiches immediately caught my eye. The only problem was that it was a roast recipe and I didn't have a roast on hand (I had chicken). Also it had ketchup in it and I think by now, we all know how I feel about ketchup! So I grabbed the general idea of the Tangy Barbecue Sandwiches and put my own sweet heat spin on it and this is what I came up with. If you want the original recipe, it is found on page 129 of the book.
While I used this pulled chicken for sandwiches, you could totally serve it over rice, in tortillas or even on a pizza! Have fun with it, after all we're JUST cooking, right?! I haven't worked that saying in for some time and felt I had to take the opportunity to. Anyway, get going!
Oh, last thing ( I know, I can't shut up today), when we had the leftovers, I decided to add some cooked turkey bacon. It's not necessary but you know, bacon makes everything better!
