    Slow Cooker Sweet Heat BBQ Chicken Sandwiches - Sweet and Heat are balanced out in this slow cooker recipe.  Save your leftovers to serve over rice, in tortillas or on a pizza!

    Slow Cooker Sweet Heat BBQ Chicken Sandwiches

    With all the grilling going on in the summertime, I think sometimes, the slow cooker gets overlooked.  It's actually a great way to avoid the oven or the stove top in those hot summer months.  I even have a few friends who plug theirs in out on their deck so they literally get no heat in their kitchen while cooking.  I haven't tried that yet, but maybe this summer I will. 

    I was guilty too, of overlooking my slow cooker lately, until last week.  I was excited to have won a copy of Fix-It and Forget-It, Feasting with your Slow Cooker from a giveaway I entered over on Prairie Gal Cookin (thank you again, Ashleigh!).  When it arrived in the mail, a recipe for Tangy Barbecue Sandwiches immediately caught my eye.  The only problem was that it was a roast recipe and I didn't have a roast on hand (I had chicken).  Also it had ketchup in it and I think by now, we all know how I feel about ketchup!  So I grabbed the general idea of the Tangy Barbecue Sandwiches and put my own sweet heat spin on it and this is what I came up with.  If you want the original recipe, it is found on page 129 of the book.

    While I used this pulled chicken for sandwiches, you could totally serve it over rice, in tortillas or even on a pizza!  Have fun with it, after all we're JUST cooking, right?!  I haven't worked that saying in for some time and felt I had to take the opportunity to.  Anyway, get going!

    Oh, last thing ( I know, I can't shut up today), when we had the leftovers, I decided to add some cooked turkey bacon.  It's not necessary but you know, bacon makes everything better!

    Slow Cooker Sweet Heat BBQ Chicken Sandwiches

    Ingredients
      

    • 1.5-2 lb boneless chicken breasts
    • 2 celery ribs chopped
    • 2 garlic cloves smashed and peeled
    • 1 sweet onion chopped
    • 1 teaspoon chili powder
    • 2 T brown sugar
    • 2 T red wine vinegar
    • 1 C BBQ sauce
    • 2 T Worcestershire sauce
    • 2 T sriracha sauce
    • Bread or rolls
    • Optional: cheddar cheese slices turkey bacon

    Instructions
     

    • Line your slow cooker with a liner or spray with non stick spray.
    • Place onion, celery and garlic in slow cooker. Place chicken on top of the vegetables. On top of the chicken add chili powder, brown sugar, vinegar, BBQ sauce, Worcestershire and sriracha.
    • Cover and cook on low 4-5 hours. Remove chicken from slow cooker and shred with 2 forks. Place chicken back into slow cooker (turned off), stir to coat with sauce and serve on toasted buns with cheddar cheese and cooked bacon if desired.
    • Alternately, serve chicken over rice, as a pizza topping or roll up in a tortilla!
