    Sheet Pan Chicken and Vegetables -  An easy and frugal chicken dinner recipe where everything is cooked all on one sheet pan for easy clean up.

    Why do I keep sharing One Pot Meals and Sheet Pan dinners?  Ummmm, because they are awesome.  They have flavor.  They are easy.  They require few ingredients.  They make the most of cheap cuts of chicken. They have minimal clean up.  Less pans = more time.  Who doesn't need more time?  I know I do.

     

    Based on my analytics, you guys really like and want easy recipes.  One of my most popular recipes right now is a recipe for Oven Roasted Potatoes and Vegetables.  It's been pinned about 25K times.  The key to that recipe is bottled dressing.  Yup, fancy huh?  I am learning you guys don't really want fancy but you want easy and delicious. 

     

    With the easy and delicious theme in mind, I decided once again to head to the bottled dressing aisle in my grocery store.  I found a garlic lemon dressing and I thought that sounded perfect.

    Ingredients
      

    • 6-8 Chicken Legs
    • 12 oz Brussels Sprouts
    • 12 Small/Fingerling Potatoes I used a mixture of white, red and purple potatoes
    • ½ C Lemon Garlic Dressing
    • 2 T Olive Oil
    • Salt and Pepper

    Instructions
     

    • Place chicken legs in a re-sealable bag with dressing. Let marinate while you are chopping your vegetables and the oven is pre-heating.
    • Preheat oven to 425.
    • Trim the brussels sprouts and cut in half. Slice potatoes in half. Place both on sheet pan (Optional: Line sheet pan with foil). Drizzle with olive oil and season with salt and pepper. Toss around vegetables to coat and then place each cut side down on baking sheet.
    • Remove chicken from marinade (reserve marinade) and nestle chicken in between vegetables. Pour reserved marinade over chicken.
    • Roast in oven for 30 minutes.
