    Beef Burrito Casserole - A family friendly dinner with all the components of a burrito minus the hassle.

    A few weeks ago, I was chatting with a blogger friend of mine and she asked me "Did you enter the Del Real Foods contest?".  I responded that I hadn't heard of it but for her to please pass along the info.  I am never one to shy away from a contest, in fact, it's competition that gives me some extra drive and to be quite honest, lately I could use a little extra boost.

    After she sent me the info, I quickly signed up and next thing I know I've got a bunch of Del Real Food products at my doorstep!  Basically the contest is to create a recipe using one Del Real Food product.  The products I received were Seasoned Shredded Beef, Arroz, Shredded Chicken, Barbacoa & Fire Roasted Green Salsa.

    Things have been so busy lately as I've been telling you that I sort of put this contest to the back of my mind.  Finally today, my husband was out at The Red Sox game with his friend and my kids had friends over (glued to the xbox) so I actually had a little free time on my hands to be in the kitchen.  I surveyed the products and while I'm not all that familiar with this type of cuisine, I know I like me some burritos!  The one problem is that I am horrendous at rolling them.  They ALWAYS fall apart!  I usually end up just scooping up all the filling with a fork so why not skip that pesky rolling part and just make them deconstructed from the get go?! Uh huh!

    For this recipe I used the Seasoned Shredded Beef, Arroz and Fire Roasted Green Salsa.  I know I only needed one product in the recipe, but, well, I'm an over achiever.

    This beef burrito casserole came together pretty quickly, making it a great choice for a busy weeknight.  The hardest part of making the beef was already done for me.

    Basically I just put all my ingredients out on the counter and started layering them in a casserole dish and baked it.  Easy peasy.

    Just as I was about to serve, I realized that I always dip my burritos in guacamole but I didn't have any in the fridge.  Uh Oh!

    So I went ahead and made a quick and easy cheater guacamole by mixing avocados, tomato, onion and lime juice with some of the Fire Roasted Green Salsa.  I just plopped it right on top of the whole casserole.  Voila! Gosh, I love a shortcut!

    Do you remember my post the other day where I created Deconstructed Lettuce Wraps because my brother is so ridiculous that he thinks they're too much work?  I wonder what his thoughts are on burritos!

    Ingredients
      

    • 1 package Del Real Seasoned Shredded Beef prepared according to package
    • 1 package Del Real Arroz prepared according to package
    • 8 oz sour cream
    • 10 Âľ oz can cream of chicken soup
    • ÂĽ C Fire Rroasted Green Salsa
    • 15.5 oz Black beans rinsed & drained
    • 5 six inch flour tortillas torn
    • 1 ½ C shredded cheese Mexican blend

    Instructions
     

    • Preheat oven to 350
    • Prepare rice and beef according to package instructions.
    • Combine sour cream, salsa and soup in a bowl.
    • Spread half the sour cream mixture on bottom of a 9x9 casserole dish and top with half of the torn tortillas. Add half of the rice. On top of the rice add half of the black beans. Over the beans place half of the beef and then half a cup of cheese. Repeat layer and end with remaining cup of cheese.
    • Bake at 350 for 25 minutes.
    • Top with guacamole if desired.

      I love Burritos but this definitely beats the traditional version of it. Definitely looks like comfort food.
