    Caramel Carrot Poke Cake

    The thing I love about preparing this Caramel Carrot Poke Cake is that it starts with a boxed cake mix.

    Lazy bakers unite! This recipe is for you if you have no patience for baking like me.

    Boxed carrot cake is baked as directed on the box, poke through the caramel sauce and top with an easy shortcut whipped topping!

    This yummy carrot cake is the perfect Easter dessert after a dinner of delicious Orange Glazed Ham!

    If you are not familiar with poke cakes, here are the simple steps.

    If you want to see step by step photos of how a poke cake is made, pop over to my Hot Fudge Sundae Poke Cake. I have photos there of how I do the holes etc.

    • Bake cake - typically in a 9x13 cake pan or similar. A single layer cake.
    • Poke - poke holes in cake with something like a wooden spoon handle
    • Pour - pour some kind of filling in holes, in this recipe it is caramel
    • Top - Top the cake with some kind of frosting or icing

    Because we are loading this cake with caramel, it is pretty sweet. If you don't want to go overboard on the level of sweetness, omit the caramel drizzle on top.

    Ingredients
      

    • 1 box box carrot cake mix + ingredients called for on box
    • 1 Cup Caramel topping
    • 16 Ounce container cream cheese frosting or vanilla, whipped
    • 8 Ounce cool whip
    • Optional: Chopped pecans or walnuts for topping

    Instructions
     

    • Prepare carrot cake as instructed for 9x13 cake. Allow to cool completely.
    • Poke holes all over cake (every inch or two) with handle of wooden spoon or similar shaped object.
    • Pour caramel over cake, making sure to get it into holes. Refrigerate half hour.
    • While cake is in refrigerator, combine frosting and cool whip, stir together well, until combined completely. Frost cake with frosting mixture.

    Optional Topping

    • Drizzle with additional caramel and/or top with chopped nuts if desired.
