    Chicken Fajita Salad

    This bright and delicious Chicken Fajita Salad includes seasoned chicken, bell peppers and onions just like your favorite chicken fajitas, minus the sizzling skillet plate.

    Bursting with bold flavors, fresh ingredients, and packed with protein, this dish is the perfect choice for those seeking a satisfying entree salad.

    If you have been wanting to get into meal prepping, this will be helpful because this Chicken Fajita Salad is great for meal prep!

    Much like my Buffalo Chicken Salad, the leftovers of this salad are delicious repurposed into a tortilla wrap.

    Speaking of buffalo chicken, you know what other fajitas are yummy? You guessed it, Buffalo Chicken Fajitas!

    I do not include a salad dressing in this recipe. Some good options for dressing would be ranch, avocado ranch or cilantro lime vinaigrette.

    🥘Ingredients

    Specific amounts can be found in the printable recipe card at the bottom of this post.

    • Olive oil
    • Butter
    • Chicken - boneless chicken tenders or boneless chicken breast
    • Bell peppers - red and yellow bell peppers
    • Onion - red onion is my preferred; can also use sweet onion or white onion
    • Greens - chopped romaine or choice of lettuce or bagged salad
    • Optional Toppings - Diced Avocado, guacamole, shredded cheese, tortilla strips or crushed chips, lime, sour cream and ranch salad dressing.

    🔪Instructions

    If you are in the market for a new and fabulous non-stick pan, I can now say after almost a year of testing, my favorite pan is the Ninja NeverStick Possible Pan.

    Cut up chicken that is seasoned in a glass bowl.

    Step 1: Cut the chicken into bite-sized pieces. Toss well with fajita seasoning.

    Cooked chicken that has been set aside on a plate.

    Step 2: Cook the chicken with butter and oil. Remove chicken and set aside.

    Step 3: Add the onion and peppers to skillet (do not wipe out skillet) and cook until tender-crisp, or desired texture.

    Salad is assembled in a white bowl. Above the bowl is a hand squeezing a lime into the bowl.

    Step 4: Assemble by placing the lettuce/greens on the bottom of a plate and top with chicken, pepper mixture and whatever other toppings you are using.

    🍲Leftovers

    As I mentioned above, the leftovers of this salad are delicious if you wrap in a flour tortilla with your favorite dressing.

    You can also add the chicken and vegetables to pasta or rice!

    Top Tip: When storing leftovers, store the chicken separately.

    Ingredients
      

    • 1 Tablespoon Olive oil
    • 1 Tablespoon Butter
    • 1 Pound Boneless chicken tenders
    • 2 Tablespoons fajita seasoning
    • 2 Cup chopped peppers (combination of green, yellow and/or red)
    • 1 Cup sliced red onion
    • 12 Ounces lettuce of choice or bagged salad
    • 1 avocado sliced or diced
    • 1 lime, cut into wedges
    • 2 Tablespoons freshly chopped cilantro
    • Optional: crushed tortilla chips

    Instructions
     

    • Cut chicken into bite sized pieces and place in a bowl. Toss chicken with fajita seasoning.
    • In a large non-stick skillet over medium/high heat melt the butter with the oil. Add the seasoned chicken to the pan, being careful not to overcrowd (if needed cook chicken in batches). After 4 minutes, stir chicken and continue to cook another 4-5 minutes until browned and cooked thru. Remove chicken from pan and set aside on a plate.
    • Return pan back to heat. If pan is dry, add 1 teaspoon more of oil. Add onion and peppers to pan and cook just until tender crisp, about 3-4 minutes.
    • Place lettuce in a large bowl or platter. Top with vegetables, avocado, chicken and cilantro. Toss to combine and serve with lime wedges.
    • Squeeze lime wedge over salad just before serving. Add tortilla chips for garnish if desired and or shredded cheddar cheese. Top or dip in desired salad dressing.
