Creamy Chicken Soup - This soup comes together quickly and easily using leftover or rotisserie chicken.

We've had a ridiculously mild fall so far, but the cold is starting to settle in. I'm starting to finally crave the warming comfort one can only get from a big bowl of steaming soup.
Earlier this week I prepared a whole chicken in my Instant Pot. It turned out pretty darn tasty. Perhaps not the prettiest bird but that didn't matter. I wasn't serving it up on a platter so the look didn't bother me. I just wanted the cooked chicken for various recipes throughout the week. I knew I was facing a busy week.
Don't feel like cooking a whole chicken? Just grab a rotisserie chicken from your local grocery store.
This Creamy Chicken Soup could easily be turned into a leftover Turkey Soup. In fact it would make a great day after Thanksgiving recipe. You could use the leftover turkey and heck, even throw in some of your leftover veggies. Definitely one of those recipes where changes can be made based on what you have on hand.

Creamy Chicken Soup
Ingredients
- 1 T butter
- ½ C diced sweet onion
- ¾ C diced carrot
- 2 C chopped cooked chicken
- 14.5 oz can diced potato drained
- 15 oz can corn drained
- ½ teaspoon dry Italian seasoning
- ¼ teaspoon black pepper freshly cracked
- 10 ½ oz can cream of potato soup condensed
- 10 ½ oz can cream of chicken soup condensed
- 2 C chicken broth
- 1 ½ C milk
Optional garnishes
- chopped crispy bacon
- chopped green onion
- shredded cheddar cheese
Instructions
- Melt butter in a pot over medium heat. Add onion and carrot to pot and cook just until onion starts to soften, about 5 minutes, stirring occasionally.
- To the pot, add chicken corn, diced potatoes, Italian seasoning, black pepper, cream of potato soup, cream of chicken soup, broth and milk. Stir well.
- Cook, stirring occasionally, over medium to medium low heat (it should bubble a little but not boil) for 15 minutes.
- Taste and adjust for salt and pepper.
- Garnish with chopped green onion, bacon or cheddar cheese if desired before serving.

I made this as written a couple of weeks ago and it was delicious! I just made a new batch and this time added (bacon as suggested), minced garlic, fresh zucchini and frozen mixed vegetables.
I cooked this a bit differently from a chemistry point of view. I used the butter and sautéed the onion, bacon, fresh thyme, minced garlic and boneless, skinless chicken thighs. Thighs produce moisture and add great flavor and now we have the chicken absorbing the bacon and onion flavors. Ahh... 🙂
Sautee and then add the zucchini and/or yellow squash (add first, give a couple of minutes) then add frozen vegetables. For me the frozen vegetables soften quicker than fresh Yellow Squash and/or Zucchini. These vegetables add great flavors to soups in my opinion. 🙂
Now add the broth, egg noodles, canned soup and sour cream, salt pepper etc. in the recipe. Crack and mix three eggs. Begin stirring soup and add eggs as you stir. Stir again and let eggs cook (wash mixing bowl and spatula or whatever you used).
Made this for my Wife for Mother's Day and everyone had two bowls so what does that say? Leaving it to you. 🙂
