    Crock Pot Brisket Tacos - Change up your regular taco night by using brisket while making things easy on yourself by using your crock pot!

    I'm kind of over regular easy tacos.  I know that sounds snobby.  I've been making tacos the same way for as long as I can remember.  I buy the yellow box with everything included and I cook up some ground beef or ground turkey and voila, dinner is served.

    I started searching for different taco recipes and I came across one called Beef Brisket for Tacos, Enchiladas and Tostadas. And I thought "brisket? for tacos?"  and then  I thought "freakn brilliant".  So thank you to That's Some Good Cookin'.  The recipe seemed so good as it was, I only substituted a few things to go with what I had on hand.  I really hate buying new spices just for one recipe.

    Since the whole purpose of me making tacos into a crock pot meal was to save time and let's be honest, get a little lazy in the kitchen, I also got lazy in the whole "building of the tacos".  I bought a bag of one of those salad kits, in Southwestern flavor.  I also bought store made guacamole.  I know, the ultimate in lazy, since guacamole is so easy to make.  Oh well.  Judge me all you want.  I had an easy dinner.

    So I put together the salad and all it's toppings in a bowl and set out an assembly line with the salad, guacamole, cheese, salsa and the dressing the came with the salad.  I also put out tortillas.  I only had the big burrito ones on hand but those work too.  Instead of us each having 2 or 3 of the small tacos, we had 1 each.  Okay, maybe 2, but that's because they were so freakn good.

    Crock Pot Brisket Tacos

    Ingredients
      

    • 2-3 lb brisket
    • 1 onion roughly chopped
    • 2 cloves garlic peeled and given a whack
    • ½ C beef broth
    • 2 teaspoon chili powder
    • 1 teaspoon salt kosher
    • 1 T dehydrated onion I used Onion Onion by Tastefully Simple
    • 1 teaspoon cumin
    • 1 teaspoon coriander
    • 1 teaspoon garlic powder
    • 1 teaspoon Chipotle & Roasted Garlic flavor seasoning by McCormick
    • ½ teaspoon smoked paprika

    Instructions
     

    • Line your crock pot with a liner or spray with non stick spray. Place the onion, garlic and broth in the bottom of the crock pot.
    • Trim as much fat from the meat as you can.
    • Combine all the seasonings (set aside 1 t of seasoning mixture) and rub on all sides of the meat and place in crockpot, on top of the onions.
    • Cover and cook on low 6-8 hours, depending on how hot your crock pot cooks.
    • Remove brisket from crockpot and place on cutting board.
    • Discard onions, garlic and most of the liquid from crockpot. Reserve about ½ C of liquid in crock pot.
    • Using two forks, shred your brisket. It should be very easy to do at this point. Return the brisket back to the crock pot. Sprinkle the remaining t of seasoning on the brisket and toss to combine. Allow to cook on low for another 15 minutes.
    • Serve with tortillas and your favorite accompaniments.

      It is nice to have simple, no big mess kind of recipes like this one. I like the idea of having simple tacos recipe.
