    Endive Salad Cups for Pizza Night  -  On our latest pizza night I paired a Freschetta Canadian Style Bacon & Pineapple Pizza and a Freschetta 4-Cheese pizza with these fun Endive Salad Cups and they were a huge hit!  Pizza night will never be boring again!

    Lately, I've been feeling like I'm running around even more than usual (how is that possible).  I don't know whether it's school year end, the warm weather or just that the kids are getting older and have more activities.  Anyway, all this running around, has left me lately, really struggling to get a balanced dinner on the table.  We aren't the kind of family that can eat dinner at 8 PM.  My kids NEED their sleep.  They always have.  They go to bed by 7:30 and if we keep them up later than that, we pay for it!  I try to get dinner served by 5:30-6:00.

    Getting a fully cooked dinner on the table by 6:00 PM is a bit tough when we don't even get home some nights until 5:30!  I don't really want to hit a drive-thru or order out all the time.  I hate getting my kids in unhealthy eating habits.  Thankfully, while my son is at soccer, I am able to run (well, drive, not actually run) to Walmart and grab some Freschetta Pizzas.

    The other night, while there, I grabbed the Freschetta Canadian Style Bacon & Pineapple for my husband and I and the Freschetta 4-Cheese for the kids.  My kids aren't much into toppings but my husband and I are; buying these instead of ordering take out, allows us to each get what we want, without spending a fortune.

    I know what you're thinking.... Frozen Pizza?  I know!  But here's the thing, Freschetta Pizzas are made with high quality ingredients.  Seriously! Plus, I think we all know how I feel about cheese by now and Freschetta uses 100% real provolone and mozzarella.  That's a big one for me.  Oh, did I mention, the crust rises without any of those weird chemicals?  I can feel good about serving these ones up to my family, for sure.

    Okay, so we all know salad goes perfect with pizza, right?  Well, I thought it would be fun to make the salad a little more enticing to the family.  I took the ingredients I generally will use in a salad and put them inside endive.  The endive was the serving vessel. 

    Making these salad cups is great because you can just pick up the entire salad.  They're crunchy and delicious and you can really change up the ingredients to suit your tastes.  For instance, most people use tomatoes in their salad.  My family doesn't care for tomatoes, so we left them out.  I opted for cucumber, radish, shaved brussels sprouts and carrots.  Once on the platter, I drizzled them all with a bit of ranch dressing.  They were so fun to make and eat!

    Ingredients
      

    • 1 Endive head leaves separated
    • 1 Carrot shaved or sliced
    • ½ Cucumber sliced and quartered
    • 4 Radishes sliced or shaved
    • 6 Brussels Sprouts shaved or chopped
    • 2 T Salad dressing prepared

    Other Optional Ingredients:

    • 2 T chopped croutons
    • Cherry tomatoes
    • Shredded cheese

    Instructions
     

    • Place all vegetables inside each leaf of endive. Top with croutons, if desired.
    • Drizzle each one with dressing. Enjoy.

      The summertime runaround is worse than the school runaround! These mini salad sides are a great way to get a few veggies in when you're in a rush.

      I love their pizzas too. And these endive salad cups are the perfect thing to pair with pizza. I could go for a few right now. So much yummy goodness on that lettuce.
