    Garden Vegetable Grilled Pizza - An easy summer dinner, loaded with marinated fresh veggies.

    Garden Vegetable Grilled Pizza!  Grilled pizza is something we love in the summer and it's fairly easy.  I use store bought dough balls but if you're up to making your own dough, go right ahead.  I'm all about easy in the summer though.

    To give my veggies some flavor I marinated them in Italian Vinaigrette.  They only needed to marinate for about 20 minutes.  Basically, I chopped my veggies and got them in the vinaigrette and then I prepped everything else.  While the veggies were hanging out I preheated the grill, pressed out the dough, prepped my corn, chopped the cheese and got out all my platters.  The one thing I can say is that once the dough is on the grill, things move FAST, so have everything ready.

    I did take a few shortcuts.  I started the corn in the microwave and then just popped it on the grill to give it good char marks.  To cook corn in the microwave, leave the husk on, wrap in a damp towel and cook 6 minutes on high.  Let it cool for a few minutes and peel away the husk and you're good to go.

    Also, my garden hasn't given me tomatoes yet so I used a canned fire roasted diced tomato and drained most of the liquid.  You can use freshly chopped, canned or whatever you prefer.

    Helpful Tools for making Garden Vegetable Grilled Pizza

    Oh, I should mention, you will need a grill basket or rack for the veggies so they don't fall through the grates. Or, a grill mat.  I've recently discovered the mat and was skeptical at first but I'm really enjoying it.  Also, when moving the veggies from the marinade to the grill, use a slotted spoon, otherwise you will end up with a lot of flare ups from the oil in the vinaigrette.

    Grilled Garden Vegetable Pizza

    Store bought dough makes this loaded vegetable pizza an easy weeknight meal.  Mix up your vegetables to suit your taste.

    Ingredients
      

    • 1 lb pizza dough prepared
    • ½ C Italian Vinaigrette I used Briannas
    • 14 oz can diced tomatoes or fresh, drained
    • 1 ear corn fresh (husk intact)
    • 1 zucchini chopped
    • ½ large red onion sliced
    • 3 garlic roughly chopped
    • 6 oz mozzarella chopped
    • Olive oil

    Garnish:

    • fresh basil

    Instructions
     

    • Place zucchini, onion and garlic in a bowl with vinaigrette. Set aside.
    • Press pizza dough down into a flat round(ish) disc on a nonstick surface, such as non stick foil. Brush top with oil.
    • Wrap corn in a damp towel and place in microwave. Cook on high for 6 minutes. Allow to cool enough to handle. Remove husk and silk. It should peel away very easily.
    • Preheat grill to medium/high heat.
    • Remove vegetables from bowl with a slotted spoon and place on grill, on a grill tray or basket. Place corn on the grill as well. Remove garlic after just 2 minutes on grill, as not to burn. Grill remaining vegetables 7-10 minutes, occasionally turning. Remove from grill and set aside. Cut kernels from cob and place with other vegetables.
    • Place pizza dough directly on grill rack, oiled side down. Cook just 2-4 minutes, until nice grill marks are in place. Brush oil on the top of dough. Flip over using spatula and/or tongs. Layer ingredients on pizza, starting with the tomatoes and ending with the cheese. Once toppings are on pizza, reduce heat to medium/low and cover. Cook about 4-5 minutes until dough is firm and cheese is melted.
    • Garnish with torn basil leaves if desired.
    • Enjoy!

      You should call this the kitchen sink pizza - it's got everything in it! I love all the great colors and flavors all grilled together. BTW - I love Briannas Poppyseed dressing! It's so good on a strawberry salad!
