    Grilled Watermelon Salad

    Let me repeat the title: Grilled Watermelon Salad.  Do I have your attention yet?  No?  Okay, how about if I mention a balsamic vinegar syrup?  Now do I have you?  I thought so. Proceed...

    Grilled Watermelon Salad

    Are you grilling fruit yet?  It took me a while to hop on the bandwagon for grilled fruit but it was worth the wait.  When fruit is grilled, it's natural sugars begin to caramelize and all kinds of good things happen.  I am a huge fan of grilling pineapple, but this was actually my first attempt at grilling watermelon. 

    I made the Grilled Watermelon Salad the other night when I was being a lazy cook.  You know those nights where frozen burgers on the grill become dinner? Well I had one of those the other day.  Whenever I cook something that is store bought, I do like to mix in something fresh for the side, usually a garden salad, but I had so much beautiful fruit in my refrigerator just begging to be used.

    Grilled Watermelon Salad

    Grilling watermelon is easy and only takes a few minutes.  I like to sprinkle a bit of sea salt on the watermelon just before putting it on the grill, but you can skip that step if that's not your thing. By the way, it's much easier to handle if you keep the rind on while grilling, you can just cut it off after.

    I couldn't get enough of this salad. Scott on the other hand, didn't even try it.  He didn't like the smell.  I pointed out that even though he's never admitted it, he just doesn't like balsamic vinegar.  Finally, he agrees he must not.  Crazy.  I know.  It's a good thing I love him.

    Inspiration for my Grilled Watermelon Salad came from Watermelon with Sweet Balsamic Syrup on The Food Network.

    Ingredients
      

    • 4 slices seedless watermelon triangle cut
    • 2 C strawberries sliced
    • œ C balsamic vinegar
    • 3 T sugar
    • 3 T water
    • 2 basil leaves sliced thin
    • Optional: coarse sea salt

    Instructions
     

    • Heat grill to medium.
    • If using salt, sprinkle salt over watermelon slices and place on grill. Cook just until good grill marks appear, flip over and repeat. Remove from grill.
    • While watermelon is grilling, prepare reduction.
    • Place vinegar, sugar and water in a small saucepan over high heat. Bring to a boil and then simmer until reduced and thick like a syrup. Set aside to cool.
    • Cut rind off watermelon and chop watermelon into chunks. Add strawberries and basil. Pour balsamic syrup over fruit and toss to coat.
    • Garnish with additional basil if desired.

      I love this combo. I have a Chopped similar, but haven't grilled the watermelon. I use tomato instead of the strawberries. Crazy refreshing! I'm def going to try your "grilled" version! Pinned!
